I know, it may sound like an odd combo, but avocado is actually a great egg or fat substitute. Though these mashed potatoes do taste a bit like avocado, with a little added cheese, (I used parmesan) they are simply amazing. I actually even enjoyed them cold. Cold, they taste more like avocado. Warmed they taste more like mashed potatoes. It’s all very interesting. It’s a must try if you like avocados. You’ll never know if you like avocado mashed potatoes unless you try them. Spinach Rice
This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Gluten Free Vol-au-Vent for Sweet or Savory Recipes
A vol-au-vent is a French pastry which is made from layers of puffed pasty, hallowed out and filled with anything from sweet to savory. This gluten free vol-au-vent is stuffed with peach pie filling, however, you may fill it with something savory which contains a little sauce or moisture, such as a seafood mousse, chicken pot pie filling, etc. How this recipe came about was when I stumbled upon a recipe for vol-au-vent, and just had to make a gluten free version. While this recipe turns out a crust similar to pie crust, it can be made with my new flaky gluten free phyllo dough. This gluten free vol-au-vent recipe allows you to be creative. You can shape them into hearts for Valentine’s Day or four leaf clovers for St. Patrick’s Day. You can scallop the edges or whatever you desire. Give it a try. Basic Gluten Free Risotto
There are all sorts of possible add-ins to this gluten free risotto recipe. However, if you wish to make a simple addition, simply adding a bit of grated parmesan/romano cheese will do the trick. I have served this rice with roast and green beans; and then used it in a ground beef casserole the following day. I added left over veggies, creating a very flavorful casserole. Gluten Free Brown Rice Pasta Recipe
I am in love! This gluten free brown rice pasta recipe is heaven on a plate! And it is so easy to make! I have made flat pasta (linguine-style) and ravioli pasta with this recipe and it works – without any starch at all! And because I used superfine brown rice flour, it did not have any grittiness at all. I had hunted all over the web for a brown rice pasta recipe that did not include potato, tapioca or corn starch or flour, but had no luck. I wanted a healthy, gluten free brown rice pasta recipe. The brown rice pasta recipes used by most manufacturers do not include starch, just brown rice flour and water. So, to the drawing board I went and came up with a recipe that contains a bit of guar gum, which is corn-free, and I added just a bit of oil to make it easier for pushing through a pasta maker. I used my pasta attachment for my KitchenAid mixer. Of course, the oil is not necessary if you’re going to roll it by hand, but a little flavor and the lack of stickiness is well worth it. This recipe is not only gluten-free, but also egg-free.
Update: I finally got around to experimenting with this recipe. I did not want to add a bunch of starch to it to make it have a good texture, like my Gluten Free Egg Noodle Recipe. Therefore, I resorted to adding gum, and egg whites. See the final recipe Brown Rice Pasta Recipe. Just be sure to use “superfine brown rice flour“. Red Beans and Ham
When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. Holiday Gluten Free Mashed Potatoes
These gluten free mashed potatoes are to die for! A family member made these a few months ago and I was afraid to eat them, as I had no idea if the bacon was gluten free, but I found out that they included sour cream and cream cheese, as well. All of the guests were raving about them, and I just had to make them, gluten free. She had added some cheddar cheese to the top. I’ve added made these with cheese on top, inside, and without cheese. You just need to make sure all of your ingredients are gluten free, including the bacon, cream cheese and sour cream. You may mix in bacon or your favorite cheese. I like cheddar. I added crumbled bacon to to pof my gluten free mashed potatoes. I bet the left overs make wonderful potato pancakes! Just fry them cold with some butter. Yum! Can’t wait to try it!
