This gluten free cream of chicken soup recipe is made with fresh ingredients. Add to other soups for an easily digestible protein. Using chicken breasts is not recommended, as it is too dry and creates a gritty texture. Brown chicken parts add more flavor. Ensure that the chicken broth you use is gluten free, or use the broth/water used to boil the chicken, though it will not have as much flavor as pre-made chicken broth. I try to stay away from corn as much as possible, but I was craving some gluten free meatballs. Delish, by the way! Because I cannot have tomato sauce, I needed to make something that was moist with the meatballs. So, I treated myself to some polenta! I usually make the polenta creamy and other times grilled. Gluten Free Cornbread Stuffing Recipe with Sausage Option

The only gluten free stuffing (some say dressing) that I care for is the kind that has been baked in a bird, whether a turkey or a chicken. However, this gluten free cornbread stuffing recipe is very good, after two attempts, and I didn’t even have it stuffed in a bird when testing it. Of course, a bird’s juices surely provides more flavor. This gluten free cornbread stuffing recipe has plenty of flavor on its own, and is perfect for those who do not care for sage, though it may be added. Corn Free Gluten Free Sweet Potato Spoon Bread

Even gluten free sweet potato spoon bread usually contains cornmeal, but for my corn free readers I thought I would make a corn free version. You can definitely substitute half of the flour for some cornmeal which will need to be cooked in the milk prior to adding it to the food processor or blender. However, my husband really enjoyed the corn-free version, and he’s a cornbread lover, and I hope you enjoy it, as well.

Rice with Basil and Candied Ginger Recipe

I searched for a candied ginger recipe online, but found mostly recipes on how to make candied ginger. So, I created my own! We really enjoyed this. I served it with gluten free chicken sausages made by Full Circle. They contain no MSG or nitrates which is very hard to find in a sausage. They have many other advantages, as well. Stuffed and Breaded Mashed Potato Gluten Free Empanadas – Croquettes

These lovely gluten free empanadas are made from mashed potatoes, stuffed with sauteed onion, green pepper, garlic and cheese (or other filling), breaded, and then deep-fried. I cannot tell you how crunch these were!-just wonderful! And they only take 80-90 seconds to fry! You can fill them whatever you desire. Just be certain that if you use cheese to shred the cheese because chunk do not melt very quickly. Make them ahead of time and fry them up right before you serve your meal. Why not speed up your regular process for mashed potatoes by adjusting 2 steps and make garlic mashed potatoes? So many of us have very busy lives and need ways of speeding up the cooking process. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. And if you’re a garlic mashed potatoes lover, simply adding whole cloves of garlic to your potatoes while they boil will create creamy garlic mashed potatoes. Gluten Free German Hot Potato Salad

This is my all time favorite potato salad recipe and potato side dish. My sister started making this about 30 years ago. She hasn’t been able to find the recipe, but did recall the ingredients. Instead of using all-purpose flour, as in a traditional German hot potato salad recipe, I used potato starch. I can’t remember the last time I made this and have lost the recipe, as well. What makes this recipe stand apart from other German Hot Potato Salad recipes is that the apple cider vinegar, combined with celery seed and a little bacon grease. Our entire family loves this recipe so much, we must have had it for about 20 straight years with our Christmas ham (with very few exceptions). It’s hard to believe Christmas is just 3 months away! I had to wing it on the quantities, but it tastes just like I remember – oh so good! Of course, I was always known for increasing the bacon and almost doubling the sauce. What are holidays for, right? This time I made it as the old recipe called for, as I just had 4 slices of bacon. Gluten Free Gnocchi

This gluten free gnocchi recipe is so easy! While visiting with one of my Dad’s Italian neighbors, I mentioned that I was on a gluten free diet. The woman told me that one of her close friends was also. She makes her some gluten free gnocchi once in awhile. I was going to the grocery store and asked the neighbor if there was anything she needed. She said that she wanted some rice flour to make some gluten free gnocchi. She called me to come over so that I can see how she makes it and shared her recipe with me. She froze some and sent me home with some. It freezes very well. She mentioned that gluten free gnocchi is more delicate than the gluten variety so when I tossed it with some pesto sauce I used a rubber spatula to prevent any breakage, though it really wasn’t a problem. My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day.
