Gluten Free Sponge Cake

Besides using this gluten free sponge cake to make gluten free lady fingers and tiramisu cake, you can use it as a substitute for shortcake. Remember those individual portion cakes you used to find near strawberries in the produce department of your grocery store? Well, you can make a sponge cake version at home. I’ve included recipes for a couple of different variations using strawberry, chocolate ganache, and sweetened whipped cream. Continue reading “Gluten Free Sponge Cake”

Gluten Free Pizza Rolls

This gluten free pizza rolls recipe is handy for any party, or just for a snack. The dough is much like pie crust, and can be filled with any filling you desire. I used a mixture of homemade gluten free pizza sauce and shredded mozzarella cheese. With what will you fill your gluten free pizza rolls? I think I will make mine larger next time so that I can add more filling. Yum! Enjoy! Continue reading “Gluten Free Pizza Rolls”

Gluten Free Brown Rice Pasta Recipe

Homemade Brown Rice Pasta

I am in love! This gluten free brown rice pasta recipe is heaven on a plate! And it is so easy to make! I have made flat pasta (linguine-style) and ravioli pasta with this recipe and it works – without any starch at all! And because I used superfine brown rice flour, it did not have any grittiness at all. I had hunted all over the web for a brown rice pasta recipe that did not include potato, tapioca or corn starch or flour, but had no luck. I wanted a healthy, gluten free brown rice pasta recipe. The brown rice pasta recipes used by most manufacturers do not include starch, just brown rice flour and water. So, to the drawing board I went and came up with a recipe that contains a bit of guar gum, which is corn-free, and I added just a bit of oil to make it easier for pushing through a pasta maker. I used my pasta attachment for my KitchenAid mixer. Of course, the oil is not necessary if you’re going to roll it by hand, but a little flavor and the lack of stickiness is well worth it. This recipe is not only gluten-free, but also egg-free.

Update: I finally got around to experimenting with this recipe. I did not want to add a bunch of starch to it to make it have a good texture, like my Gluten Free Egg Noodle Recipe. Therefore, I resorted to adding gum, and egg whites. See the final recipe Brown Rice Pasta Recipe. Just be sure to use “superfine brown rice flour“. Red Beans and Ham

New Orleans Southern Red Beans and Rice

When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. It turned out very flavorful – just perfect for my taste buds! Serve your red beans and ham over white rice, or brown rice, for a healthier choice. Continue reading “Red Beans and Ham”

Holiday Gluten Free Mashed Potatoes

Image: Holiday Gluten Free Mashed Potatoes

These gluten free mashed potatoes are to die for! A family member made these a few months ago and I was afraid to eat them, as I had no idea if the bacon was gluten free, but I found out that they included sour cream and cream cheese, as well. All of the guests were raving about them, and I just had to make them, gluten free. She had added some cheddar cheese to the top. I’ve added made these with cheese on top, inside, and without cheese. You just need to make sure all of your ingredients are gluten free, including the bacon, cream cheese and sour cream. You may mix in bacon or your favorite cheese. I like cheddar. I added crumbled bacon to to pof my gluten free mashed potatoes. I bet the left overs make wonderful potato pancakes! Just fry them cold with some butter. Yum! Can’t wait to try it!

Gluten Free Pork Tenderloin

Whether cooking for a small group or a large crowd, gluten free pork tenderloin is an easy, yet elegant main course. I chose to cook two pork tenderloins, one 2.75 pounds, and the other 2.65 pounds. A half pound per person is sufficient, and will most likely yield some left overs. This gluten free pork tenderloin recipe is no different than any other pork tenderloin recipe, other than gluten free starch was used to thicken the gravy. One very particular guest mentioned that this was no too highly seasoned, but just right. Enjoy! Continue reading “Gluten Free Pork Tenderloin”

Gluten Free Spritz Cookies Made by Hand

These gluten free spritz cookies are popular in Scandinavian countries during Christmas time. You can even make them with a device. They are a butter cookie either made using a cookie press, pastry bag, cookie cutter, or handmade shapes. Not having a cookie press myself, yet, and since the dough was too thick for a pastry bag, I chose to experiment with different methods of joining balls of cookie dough together to make my gluten free spritz cookies. I was hoping this would help those who cannot afford a cookie press. I created 1/2 teaspoon balls of dough, either using 5 or 6 balls, and filling the center with the same size or smaller balls. I found the smaller balls, close together, work best, seen in the cherry filled cookie in the photo below. Of course, the traditional version is not gluten free, however, just replacing the flour for gluten free flour and starches, and adding a bit of baking soda and xanthan gum results in great gluten free spritz cookies. Enjoy! Continue reading “Gluten Free Spritz Cookies Made by Hand”

Gluten Free Glazed Meatballs – All Beef

Sweet Glazed Gluten Free Meatballs

These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. For the kids, I skipped the onion or garlic that I planned on using in this glazed meatball recipe, but used onion powder instead. Enjoy this gluten free glazed meatball recipe and your holidays! Gluten Free Gingerbread Cookies

Image: Gluten Free Gingerbread Cookies

In making gluten free gingerbread cookies, the trick is to have a very stiff dough and chill the dough to prevent spreading during baking. This dough is high in starch, making a soft (a bit chewy) cookie. If you like them crispy, I suggest using a higher rice flour to starch ratio and skip the baking powder. I chose to make a softer gluten free gingerbread cookie because my survey on Facebook resulted in more soft than crispy votes, and I cannot resist a soft or chewy cookie. I hope you enjoy this gluten free gingerbread cookies recipe. You do not need to be an artist to decorate them. I am certainly not. Yet they taste just as good. They are so fun to make. Have some fun today and get started. My great nieces and nephews loved them! Continue reading “Gluten Free Gingerbread Cookies”

Gluten Free Cornbread – Cranberry Polenta Bread

Polenta is coarser than cornmeal and compliments this gluten free cornbread (actually gluten free polenta bread) recipe well, as it calls for superfine rice flours. It is just like a cornbread, but a coarser grain. I used Golden Pheasant brand, found at my local grocery store. You can definitely use cornmeal, if that is what you like, or is easier to obtain. This recipe was created upon my husband’s request for a coarser, crumbly, gluten free cornbread. It is moist, yet has more texture and crumb. I added cranberries, thinking it would be a nice touch during the holidays. Enjoy, and happy holidays to you and yours! Continue reading “Gluten Free Cornbread – Cranberry Polenta Bread”
