Gluten Free Bagels

Homemade Gluten Free Bagel

This gluten free bagels recipe turned out very light – delish! – closer to a bread, but may be made heavier by using 1 less egg white. I created a Whole Grain Gluten Free Bagels recipe a few months ago, but needed to perfect a bagel recipe for an upcoming video I am doing for eHow.com. (They’ve invited me to be gluten free recipe talent for them!) I decided to use flour and starches that were readily available to all and that were inexpensive. Future versions may contain different flours. Though not perfected yet, in the sense of smoothness on the outside, they turned out light, which was what I was going for. Newer bagel recipes contain holes, which you never used to see before. I think I’ll try rolling out the dough next time which should create a smoother finish. Meanwhile, enjoy these gluten free bagels. I enjoyed mine toasted. Yum! Continue reading “Gluten Free Bagels”

Gluten Free Chicken Recipe: Broiled Honey Mustard Fillets

I’m in love, and I’m not referring to my husband. I’m in love with this honey mustard gluten free chicken recipe! I was was in a rush and need an easy gluten free chicken recipe that was low in fat and dairy-free. It was wonderful! It is similar to orange chicken, without the orange. If you’re not dairy-free you may also enjoy my Gluten Free Honey Yogurt Chicken Recipe which is also very good; and less sweet and a little creamy. However, this gluten free chicken recipe is a bit more gourmet, as it calls for white wine and other flavorful additions. Enjoy! Continue reading “Gluten Free Chicken Recipe: Broiled Honey Mustard Fillets”

Twisted Yeast-Free Gluten-Free Breadsticks with Cheese

Image: Soft Gluten Free Breadsticks

These gluten free cheese breadsticks taste cheesier than the usual recipes because they are rolled in cheese, with only a little cheese inside. I have found that even if I quadruple the amount of cheese inside, you still do not taste as much cheese compared to these. This particular recipe can be twisted which makes for a more elegant presentation. Similar to pizza crust, they are crunchy on the outside and doughy on the inside. You may bake them for a shorter time if you wish your gluten free cheese breadsticks softer. Since my husband approves, and he eats gluten, he’s the best to judge. He loved this recipe the best. He dipped them in pizza sauce as an appetizer. I’m sure Super Bowl Sunday he’ll be asking for this gluten free recipe. Enjoy! My hubby sure did! Ground Beef Recipe: Gluten Free Risotto Casserole

Using my basic gluten free risotto recipe I created this delicious casserole. It is fully of delightful aromas as well as flavors. The beef mixture cooks up in a matter of a few minutes. Make the risotto the day before. Then just add in veggies and the risotto and you have yourself a gluten free dinner recipe in well under 30 minutes. Enjoy! Basic Gluten Free Risotto

There are all sorts of possible add-ins to this gluten free risotto recipe. However, if you wish to make a simple addition, simply adding a bit of grated parmesan/romano cheese will do the trick. I have served this rice with roast and green beans; and then used it in a ground beef casserole the following day. I added left over veggies, creating a very flavorful casserole. You’ll find that the below photo is a gluten free risotto dish with ginger, rosemary, parmesan, and gorgonzola cheese. What will you add to your risotto? Baked Chicken Thighs Recipe (Gluten-Free)

Image: Baked Chicken Thighs

I really had to dig deep in the memory banks for this baked chicken thighs recipe, and I’m so glad that I did. It was delicious! I haven’t made it in years, and I came to realize there really isn’t much to this recipe at all. I was at my Dad’s last week and though he has limited gluten free ingredients and supplies, I am usually able to whip up most basic recipes. This really is an easy gluten free recipe. If you’d like to make it lower in calorie, substitute some of the butter or buttery spread for a bit of gluten-free chicken broth. Enjoy! Dad did!

The video below is meant to give you a bit more reality on the recipe, how to beat the egg whites, and more. Enjoy! Gluten Free Casserole: Beef Pesto Rice

In a rush to make a gluten free dinner? Try this easy gluten free casserole recipe using premade gluten-free basil pesto. Add veggies, if you desire, or serve with a salad. This recipe includes only 4 ingredients and can be made in about 15 minutes. Some rice brands may take longer to cook, however, I found one brand that cooks in under 20 minutes, less. You can speed up the cooking time by using instant rice, which is lower in carbs and only takes about 5 minutes to cook. My husband and I really enjoyed this simple, yet scrumptious gluten free casserole recipe, Italian style! Continue reading “Gluten Free Casserole: Beef Pesto Rice”

Gluten Free Casserole: No Egg Chicken Carbonara

Image: Gluten-Free Egg-Free Chicken Carbonara

I broke all the rules in making carbonara. Thus the title, “Gluten Free Casserole”.  I used penne pasta, no egg yolk, mozzarella instead of Parmesan, and more.  It is so yummy! You can make this an easy recipe by using pre-cooked gluten-free crumbled bacon. This dish has a gourmet flavor, as I used a bit of white wine. However, you can substitute the wine with additional chicken broth. Add veggies, if you desire. I am looking forward to trying this gluten free casserole with fresh baby spinach. I surely would pay for this dish in a fine restaurant. Continue reading “Gluten Free Casserole: No Egg Chicken Carbonara”
