Gluten Free Soy Free Soy Sauce Substitute

Image: Gluten Free Soy Free Soy Sauce Substitute

It’s difficult enough finding a gluten free soy sauce, let alone a gluten free soy free soy sauce. One does exist, though. South River Miso makes a gluten free soy free soy sauce substitute from chickpeas, Miso Tamari, chickpea flavor. It is supposed to be so good that they limit your purchase quantity because it takes at least 3 months to make. Their products are unpasteurized, living foods, rich in enzymes and beneficial microorganisms. They start shipping this year on September 15, 2011. I still need to contact them to find out if they avoid cross-contamination, though, as I see they make a barley miso, as well. I’ll call them and update this page when I find out, hopefully today or early next week. Meanwhile, you can make your own gluten free soy free soy sauce substitute. Carla’s Gluten Free Cake Flour Blend – Self-Rising

Gluten Free Cake Flour Blend

It’s extremely convenient to have cake flour in a canister that already has everything you need including leavener. It makes gluten-free cake baking a breeze! Since this mix contains baking powder and baking soda, it is perfect for just about any cake recipe. It addresses the times you need an acidic ingredient as well. For example, when you use Dutch-processed cocoa, which is alkaline-based, you should use baking soda. Continue reading “Carla’s Gluten Free Cake Flour Blend – Self-Rising”

Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)

Image: Grilled Gluten Free Pizza

I keep hearing from some of my readers that it’s just too hot to bake, even a good gluten-free pizza! In researching how to grill a gluten-free pizza in a cast iron skillet, I came across Man Tested Recipes’ Pizza Dough for Cast Iron Skillet Pizza recipe. Though it is not a gluten-free grilled pizza recipe, it provided me with how much yeast to use, so I could skip the Expandex used in my previous gluten free pizza crust recipe. In addition, my last recipe was a bit too chewy for my taste. So, this time, I added a little more sorghum flour, used less tapioca starch and more potato starch, skipped the agar-agar, and tripled the yeast. It came out great in less than hour! I hope you enjoy! Continue reading “Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)”

Gluten Free Hash Browns with Potatoes and Zucchini

Gluten Free Hash Browns and Zucchini

In an effort to add more vegetables to my diet, I am finding more and more ways of either hiding them or adding them to standard recipes. Homemade hash browns do not take much longer to cook than the frozen kind. The only extra work is in peeling them. However, they don’t turn out as crispy as frozen do. I just shred my potatoes, zucchini and onion through the food processor and it’s prepped in no time! Continue reading “Gluten Free Hash Browns with Potatoes and Zucchini”

Fried Colored Potatoes and Onion

This dish is not only attractive, but very tasty, and naturally gluten free. If you are used to frying or roasting potatoes, adding a bit of chopped onion and/or garlic provides quite a bit of flavor. However, all three of these potatoes tend to have more flavor than brown/russet potatoes. Using colored potatoes is also very attractive in potato salad, as well. I picked up a very small bag of baby colored potatoes at Trader Joe’s. If you have one locally, you may want to check there if you can’t find them in your local supermarket. Gluten Free Vegan Italian Pasta Casserole

Gluten Free Vegan Casserole with Artichoke Hearts

When my husband isn’t home for dinner, I often just throw any ingredients in a pan and go for it. I don’t need meat every night. This is my favorite out of all of my gluten free pasta recipes, and it happens to be gluten free vegan. The other night I went in my pantry for dog food when I spotted a jar of artichoke hearts and immediately thought of some with pasta, along with red bell pepper. The rest is history. I used just about every Italian ingredient I could get my hands on in my kitchen to create an authentic gluten free Italian recipe. It’s something that I knew must already exist; however, I had no name for it. That’s all I knew was I would be happy to pay for this in a fine restaurant as a main dish. I could eat this every night, if needed. Loved it! Let me know how you like it, if you give it a try. It may be used as a main dish or a side dish. Mangia! (Italian for “eat!”) Continue reading “Gluten Free Vegan Italian Pasta Casserole”

On the 4th of July I had a sweet tooth. Actually, I have had a sweet tooth all week, but not for dessert. I went to the grocery store, hungry, the other day and ended up with a cart full of naturally gluten-free foods, such as gluten-free cocktail onions and raspberry balsamic vinegar. Obviously, not just sweet foods, but tangy, as well. Must be something going on with my diet. Hmmm. Meanwhile, I hope you enjoy this recipe strawberry spinach salad, as well as the dressing. We did! Honey Mustard Yogurt Grilled Chicken Breasts

Grilled Gluten Free Chicken Marinated in a Honey Mustard Yogurt Sauce

My husband is the griller in our family, and I am the one that creates the marinade, this time for a gluten free chicken recipe. However, I have been doing more and more grilling myself, lately. While watching my favorite cooking shows, I have learned that all of the judges look for not only taste, but grill marks! I offer an easy way to make additional, attractive grill marks below, along with a wonderful honey mustard yogurt marinade. Continue reading “Honey Mustard Yogurt Grilled Chicken Breasts”

Strawberry Gluten Free Frozen Yogurt

Homemade Gluten Free Frozen Yogurt

While most frozen yogurt recipes are made with plain yogurt, I used Greek yogurt, as it is more easily digested than regular yogurt and contains good live bacteria, if you purchase the good kind. I use FAGE Greek yogurt. In addition, instead of using cow’s milk (non-fat is traditionally used), coconut milk or gluten free rice milk may be substituted. I used homemade raw almond milk. You can use any yogurt or milk you desire to fit your dietary needs. This frozen yogurt is sweetened with agave syrup which reacts slower on your glycemic (blood sugar) levels instead of all at once like table sugar. However, if you desire to use table sugar or evaporated cane sugar, you may add it all in the pan when cooking the strawberries. I hope this gluten free frozen yogurt recipe fulfills you and/or your family’s sweet tooth without the health risks! Love strawberries! Continue reading “Strawberry Gluten Free Frozen Yogurt”

Gluten Free Rice: Rice-A-Roni Style Chicken and Broccoli

Gluten Free Chicken and Broccoli Rice-A-Roni

The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. We enjoyed it very much. The hubby said it was very moist and went back for seconds! Continue reading “Gluten Free Rice: Rice-A-Roni Style Chicken and Broccoli”
