Baked Gluten Free Sweet Potato Fries

Sweet Potato French Fries

This month, Joy Bauer’s recipe contribution comes from her Celiac Disease Recipes Collection. Low in fat and sodium, this gluten free sweet potato fries recipe is absolutely delicious without a thing added to them besides a little olive oil cooking spray. We found them a welcome change in our gluten free dinner menu. Fries don’t have to be crispy and drenched in oil to taste great. If you haven’t made them yet, I’m sure you’ll agree. Thank you again, Joy for your healthy gluten free recipes. Continue reading “Baked Gluten Free Sweet Potato Fries”

Gluten Free Pie Crust with Lattice Top (No Starches)

Image: Gluten Free Peach Pie

For pie crusts, I usually use my Gluten Free Phyllo Dough Recipe, as I created it long ago when I was satisfied with this heavier texture as a substitute for phyllo dough. However, it turned out to be a wonderful gluten free pie crust recipe instead, but it is not dairy-free. I used it in my Gluten Free Peach Custard Tart. This new recipe is dairy-free. Gluten Free Consomme Rice

My mother was famous for her beef consomme rice recipe. However, Campbell’s Beef Consomme Soup is not gluten free; therefore, I could no longer make it. Missing its jell-like properties, I decided to convert her recipe to an easier gluten free one, using plain broth. Though if you have the time, Emeril on Food Network has a wonderful gluten free consomme recipe, where you can use any flavor broth you desire, (beef, chicken, or vegetable broth) (make sure it’s gluten free). It all depends upon what you are serving and/or your dietary needs. Beef has the best flavor, to me. However, the photo below represents chicken consomme rice since I was serving chicken that day. My husband enjoyed it so much, he went back for seconds. Continue reading “Gluten Free Consomme Rice”

Gluten Free Fruit Sandwiches

Image: Apple Sandwiches

No gluten free bread on hand? Not a problem! By slicing apples or firm pears you have a healthy substitute. Of course, fruit sandwiches may not go with your favorite gluten free cold cuts, but an almond butter, peanut butter, or whatever your favorite butter may be, is the perfect compliment to fresh fruit, and provides your protein. However, sliced chicken or turkey on apples may work well. In addition, nut butter also provides adhesion so that your add-ons stick together, without falling out. Whatever you choose, you cannot go wrong with fresh fruit. It’s delicious and nutritious! Gluten Free Bars – Apple Walnut (Sugar-Free)

Image: Whole Grain Gluten Free Apple Bar

I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. You may also make them higher in fiber by using corn or rice bran to replace some or all of the buckwheat flour. Continue reading “Gluten Free Bars – Apple Walnut (Sugar-Free)”

Grain Free Gluten Free Applesauce Cake

Gluten-Free Grain-Free Applesauce Cake

Baking gluten free isn’t always easy, but if you’re also on a grain free diet, choices are more limited. This gluten free applesauce cake recipe is moist, can be made with or without starch (see tips for all almond meal without starch), and does not call for any gums, butter or oil. It is a one-layer cake, about 1″ high and about the weight of banana bread, though tossing in an additional egg will make it lighter. Some cakes may not necessarily need a springform pan, but because of this cake’s weight, I highly suggest using one, as to not break it when removing it from the pan. It was so delicious and fast to make. This gluten free applesauce cake would make a nutritious snack without any topping. Enjoy! Continue reading “Grain Free Gluten Free Applesauce Cake”

Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts

Image: Gluten Free Blueberry Sauce

All blueberry sauce recipes may not be gluten free, but most are, provided you use a gluten free starch. Most blueberry sauce recipes call for starch, whether cornstarch, or possibly tapioca or potato starch in a gluten free blueberry sauce recipe. When using the recipe below, no starch is needed, as it is already included in the confectioner’s sugar (powdered sugar). Most powdered sugar you find in the supermarkets contain cornstarch. If you’re corn intolerant, or like to avoid GMO (genetically modified engineered) products, and you’re fortunate enough to live near a Trader Joe’s store, check out their Organic Powdered Sugar. It is made with tapioca starch, and a less refined sugar, evaporated cane juice. Continue reading “Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts”

Gluten Free Dairy Free Almond Avocado Pesto

Image: Gluten Free Avocado Pesto

This is one of those gluten free recipes that truly tastes spectacular. I have stopped using pine nuts in my pesto awhile ago. Almonds provide much more flavor. I have been searching for a way of creating a creamy dairy-free pesto and I finally figured how to achieve it, with avocado! I’m an avocado lover and am always on the lookout on how to use them in new ways. My husband, however, is not a fan of avocados, so I just split the recipe in half and make one with avocado and other half with 1/4 cup Parmesan cheese, as in my Gluten Free Almond Pesto recipe. Because pesto is raw, you can use it on vegetable pasta for a gluten free raw dish, as well. Avocado pesto – I’m hooked, and I bet you will be, too. Sugar-Free Gluten Free Chocolate Parfait

Image: Gluten Free Chocolate Parfait

I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup. Either way, the natural way may be more work, but it’s delicious and a healthier choice. Enjoy! Continue reading “Sugar-Free Gluten Free Chocolate Parfait”
