Coconut Whipped Cream – Dairy Free

Gluten Free Cake with Dairy Free Whipped Cream

This is a wonderful addition to your gluten free desserts! I found a few recipes online for coconut whipped cream, but I could tell that none of them would do the trick. One had it right, though, in using just the cream of a can of coconut milk. Yet it called for regular sugar, versus powdered. If you’re vegan, or prefer not use highly processed powdered sugar, you may consider using powdered evaporated cane sugar. As of last fall, I purchased some at Trader Joe’s. They carry it as “Organic Powdered Sugar”. It comes in a bag. For my gluten free dairy free readers, I hope you enjoy this dairy free recipe! Note: The topping on the cake in the photo below is the coconut whipped cream, not the other layers. Continue reading “Coconut Whipped Cream – Dairy Free”

Gluten Free Macaroni and Cheese with Chicken and Broccoli

Image: Gluten Free Macaroni and Cheese with Broccoli and Chicken - Unbaked

I had plans on making gluten free macaroni and cheese and then had the idea that adding some broccoli would be a great combo. Then I got carried away and decided to through the some chicken breast fillets in at the bottom of the baking dish. It made the chicken very moist, and delicious. I hope you enjoy this recipe. Last night my hubby and I definitely did! I look forward to making this with various left over meats and veggies. What will you use? Twisted Yeast-Free Gluten-Free Breadsticks with Cheese

Image: Soft Gluten Free Breadsticks

These gluten free cheese breadsticks taste cheesier than the usual recipes because they are rolled in cheese, with only a little cheese inside. I have found that even if I quadruple the amount of cheese inside, you still do not taste as much cheese compared to these. This particular recipe can be twisted which makes for a more elegant presentation. Similar to pizza crust, they are crunchy on the outside and doughy on the inside. You may bake them for a shorter time if you wish your gluten free cheese breadsticks softer. Since my husband approves, and he eats gluten, he’s the best to judge. He loved this recipe the best. He dipped them in pizza sauce as an appetizer. I’m sure Super Bowl Sunday he’ll be asking for this gluten free recipe. Enjoy! My hubby sure did! Basic Gluten Free Risotto

Image: Ginger Risotto

There are all sorts of possible add-ins to this gluten free risotto recipe. However, if you wish to make a simple addition, simply adding a bit of grated parmesan/romano cheese will do the trick. I have served this rice with roast and green beans; and then used it in a ground beef casserole the following day. I added left over veggies, creating a very flavorful casserole. You’ll find that the below photo is a gluten free risotto dish with ginger, rosemary, parmesan, and gorgonzola cheese. What will you add to your risotto? Gluten Free Brown Rice Pasta Recipe

Homemade Brown Rice Pasta

I am in love! This gluten free brown rice pasta recipe is heaven on a plate! And it is so easy to make! I have made flat pasta (linguine-style) and ravioli pasta with this recipe and it works – without any starch at all! And because I used superfine brown rice flour, it did not have any grittiness at all. I had hunted all over the web for a brown rice pasta recipe that did not include potato, tapioca or corn starch or flour, but had no luck. I wanted a healthy, gluten free brown rice pasta recipe. The brown rice pasta recipes used by most manufacturers do not include starch, just brown rice flour and water. So, to the drawing board I went and came up with a recipe that contains a bit of guar gum, which is corn-free, and I added just a bit of oil to make it easier for pushing through a pasta maker. I used my pasta attachment for my KitchenAid mixer. Of course, the oil is not necessary if you’re going to roll it by hand, but a little flavor and the lack of stickiness is well worth it. This recipe is not only gluten-free, but also egg-free.

Update: I finally got around to experimenting with this recipe. I did not want to add a bunch of starch to it to make it have a good texture, like my Gluten Free Egg Noodle Recipe. Therefore, I resorted to adding gum, and egg whites. See the final recipe Brown Rice Pasta Recipe. Just be sure to use “superfine brown rice flour“. Gluten Free Low Fat Cream of Broccoli Soup

Cream of Broccoli Soup - Gluten Free

I usually make this low fat cream of broccoli soup by only using chicken broth, and sometimes even make it lower in fat by substituting some of the broth with water. However, this time I added some milk and a splash of whipping cream to make this higher in calorie for my father who is on a high caloric diet. I have added both low fat and high calorie variations in the recipe below. Lucky for me it’s easily made gluten free. I hope you enjoy this low fat cream of broccoli soup recipe, or the rich version. They both turn out creamy. I’ve enjoyed both! Continue reading “Gluten Free Low Fat Cream of Broccoli Soup”

Gluten Free Basil Cream Sauce

This basil cream sauce recipe is lower in fat than those made with whipping cream or evaporated milk. Yet it was so yummy on my ravioli. Basil cream sauce is naturally gluten free, however, if using a commercially grated cheese, you’ll need to ensure that is is gluten free. Make it dairy free by using milk and cheese substitutes. My husband is not a fan of cream sauces, but with the basil flavor, he even liked it on gluten free raviolis. Continue reading “Gluten Free Basil Cream Sauce”
