I love soup, but out of all my gluten free soup recipes this has to be my new fave! In an attempt to eat healthier I have been purchasing produce that I have either never purchased before or seldom do. I purchased a butternut squash and decided to make this gluten free butternut squash apple soup. The traditional butternut squash recipes just did not appeal to me. I decided to add a bit of apple to sweeten it. Below you will find my butternut squash and apple soup recipe. It is low in sodium. And don’t forget to check out the link below to all of our gluten free soup recipes! Continue reading “Gluten Free Butternut Squash Apple Soup”

Gluten Free Raw Fudge

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. This raw fudge makes a great dessert, as well as a snack, and is also low-sodium, low-fat, vegan, gluten-free and dairy-free dessert. And healthy, too! Continue reading “Gluten Free Raw Fudge”

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose. Gluten Free Blackberry Sauce for Ice Cream and More

My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests. Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Frittata recipes make an inexpensive Sunday brunch or dinner along with a vegetable or salad. Continue reading “Potato Frittata with Pepperoni”

Gluten Free Apple Bread Pudding Cake

I had two goals for this dessert. I wanted to make a dessert that was heavier than a cake, yet lighter than a brownie; with less sugar than the average applesauce cake. I used agave syrup, blended stevia powder, and some homemade applesauce. It came out between a good brownie and a bread pudding; moist, but not wet. This recipe is dair-free, but not egg-free.
