While I have a few recipes for chocolate chip cookies on this site, they are either double chocolate, soft, or a bit crunchy. This one is your typical chewy gluten free chocolate chip cookies. I don’t know why I haven’t developed a recipe for them earlier as they are one of my favorites. I hope you enjoy this recipe as much as we have.

You could say gluten free chocolate cookies are a dime a dozen, but not these. What makes them special is they’re grain-free, flourless, and delicious! They are made without egg yolk, oil, or butter, and can easily be made dairy-free by using Enjoy Life Mini Chocolate Chips or additional nuts. Oh you want them nut free? Skip the nuts and use more chocolate chips. Whatever your allergies are, there’s a work around. For those who are intolerant to potatoes, use tapioca or cornstarch or to replace the one tablespoon of potato starch. You can even use arrowroot if you’re allergic to all other starches. Similar to brownies when warm, and chewy once cooled, they are extremely easy to make. In about 40 minutes, you could be sinking your teeth into one these four-inch bad boys. They are simply addicting!

If you looking for soft gluten free chocolate chip cookies, you’ve come to the right place. If you prefer firm cookies check out my previous Gluten Free Chocolate Chip Cookies made with a bit of almond flour. While this recipe is delicious, I favor the almond flavor a bit more. If you have access to superfine rice flour, I highly recommend using it over regular rice flour, as the regular is quite gritty. See the tip section to prevent a bit of this gritty flavor. These gluten free almond cookies may be made with store-bought almond butter or home ground. You will find the directions provided below for how to do this yourself in your food processor or Vitamix blender. Add just a few ingredients and some your favorite chocolate chips and you’re all set. These cookies are a bit chewy, a bit soft, and a bit crunchy. Enjoy! I not only broke down and made chewy gluten free chocolate cookies but made them with chocolate chips to boot, for a double chocolate delight! I wanted to duplicate the cookie recipe used in the Pizookies at BJ’s Restaurant Brewhouse. They serve you a warm cookie freshly baked in a large tin topped with 2 scoops of rich chocolate ice cream. They even add a square of Ghirardelli Chocolate. These cookies are to die for! Fortunately, theirs are made with gluten, or I would be sharing one every time I visited there. Due to their calorie content, I would not eat these cookies often, but they are a definite treat for guests and special events.
