Gourmet Fresh Gluten Free Peach Crisp

Image: Gluten Free Peach Crisp

This gluten free peach crisp is awesome! It calls for plenty of butter in order to make the topping nice and crispy. If you are wondering what the¬†difference between a cobbler and a crisp is, a cobbler is made with a dough batter, similar to biscuit dough. A crisp is usually made with flour, brown sugar, cinnamon, and butter. A crisp has a crumbly topping. Cobbler got its name because the biscuit dough is usually dropped in pieces, creating a cobblestone affect. Meanwhile, enjoy this gluten free peach crisp. Be creative and add your favorite ingredients – perhaps a bit of fresh ginger to bring on a little heat. Continue reading “Gourmet Fresh Gluten Free Peach Crisp”

Mascarpone Filled Gluten Free Cannoli Dipped in Dark Chocolate

Gluten Free Cannoli with Mascarpone Filling

I saw some regular cannoli in a bakery decorated so elegantly that my first thought was that I just had to make a gluten free version! They were filled with mascarpone cheese, which is a sweetened Italian cream cheese. The one thing I will never order in a bakery is pre-filled cannoli, as sitting there just makes the cannoli shell soft. Ordering ahead of time is the only way to go, but making them from scratch is even better. If you’re considering skipping the chocolate dipping step, consider that when dipped in chocolate cannoli ¬†stand up properly, instead of rolling over when served or displayed. Enjoy these luscious gluten free cannoli! Continue reading “Mascarpone Filled Gluten Free Cannoli Dipped in Dark Chocolate”

Chocolate Bowl Recipe (Gluten-Free) with Chocolate Mousse

I had ordered some chocolate dessert molds and some chocolate candy molds so that when I went to visit my grandkids we’d have something fun to do. I wanted to show the family that gluten free desserts can be delicious, too. We made chocolate bowls filled with mousse. The gluten free chocolate mousse was from a packaged that we doctored up. And we topped it all off with a chocolate candy. Yum! However, we used too large of a size mold, and it was just way too much chocolate for some of us. Though some of us die-hard chocolate lovers finished every bite. I suggest a little smaller size, though any size would make wonderful gluten free desserts. You can even fill them with fresh fruit. If you do not have a chocolate mold try using small custard cups and top one with another. Enjoy and have fun! Continue reading “Chocolate Bowl Recipe (Gluten-Free) with Chocolate Mousse”

Gluten Free Horns

Gluten-free Horn filled with chocolate mousse

A crisp, flaky pastry is something many people miss on a gluten free diet. I decided to create a recipe for gluten free horns because I have been wanting to test out my cream horn molds. I decided to use my gluten free quick phyllo dough recipe instead of my¬†gluten-free cannoli shells since¬†the cannoli shells¬†are deep-fried and the phyllo dough may be baked. They came out crisp, golden brown, flavorful and outright delicious! Continue reading “Gluten Free Horns”

Gluten Free Chocolate Bark Recipe

Chocolate Bark

If you are a chocolate and a nut lover like I am, you will appreciate this chocolate bark recipe because it is very heavy in the nuts, making it a more nutritious and high protein choice. The chocolate in this recipe can be adjusted to your liking. I used about 2/3 milk chocolate and 1/3 semi-sweet morsels. You can use Enjoy Life semi-sweet chocolate chips to make it gluten-free, dairy-free, peanut-free, soy free, egg free, casein-free, kosher pareve, vegan and artificial-ingredient-free. Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich! Check out my version and it is still super rich and triple chocolate though I have lessened that, as well. Continue reading “Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)”
