I saw some regular cannoli in a bakery decorated so elegantly that my first thought was that I just had to make a gluten free version! They were filled with mascarpone cheese, which is a sweetened Italian cream cheese. The one thing I will never order in a bakery is pre-filled cannoli, as sitting there just makes the cannoli shell soft. Ordering ahead of time is the only way to go, but making them from scratch is even better. If you’re considering skipping the chocolate dipping step, consider that when dipped in chocolate cannoli  stand up properly, instead of rolling over when served or displayed. Chocolate Bowl Recipe (Gluten-Free) with Chocolate Mousse

I had ordered some chocolate dessert molds and some chocolate candy molds so that when I went to visit my grandkids we’d have something fun to do. I wanted to show the family that gluten free desserts can be delicious, too. We made chocolate bowls filled with mousse. The gluten free chocolate mousse was from a packaged that we doctored up. And we topped it all off with a chocolate candy. Yum! However, we used too large of a size mold, and it was just way too much chocolate for some of us. Though some of us die-hard chocolate lovers finished every bite. I suggest a little smaller size, though any size would make wonderful gluten free desserts. You can even fill them with fresh fruit. Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich!
