Gluten Free Chocolate Bark Recipe

If you are a chocolate and a nut lover like I am, you will appreciate this chocolate bark recipe because it is very heavy in the nuts, making it a more nutritious and high protein choice. The chocolate in this recipe can be adjusted to your liking. I used about 2/3 milk chocolate and 1/3 semi-sweet morsels. You can use Enjoy Life semi-sweet chocolate chips to make it gluten-free, dairy-free, peanut-free, soy free, egg free, casein-free, kosher pareve, vegan and artificial-ingredient-free.

If I had had some dried cranberries, I would have substituted some of the nuts for some berries. You can use chopped dates or anything you would enjoy. In the chocolate ratio I used, it ended up tasting like milk chocolate. I may add more semi-sweet next time.

Gluten-free Chocolate Bark Recipe

An easy chocolate bark recipe that you can spice up with chili powder or your favorite spices.

Ingredients:

  • 4 oz. (1/2 cup) Nestle's milk chocolate morsels (or Enjoy Life's dairy-free semi-sweet chocolate chips)
  • 4 oz. (1/2 cup) Nestle's semi-sweet chocolate morsels (or Enjoy Life's dairy-free semi-sweet chocolate chips)
  • 1/3 cup slivered almonds
  • 1/3 cup chopped walnuts
  • 1/3 cup chopped macadamia nuts

Instructions:

  1. Line a baking sheet with parchment paper.
  2. Heat chocolate, in a bowl over a simmering pot of water, to 100°F or until chocolate has just melted, but may have about 20 morsels left not melted; remove from heat and stir until all are melted; and then stir in nuts.
  3. Spoon onto parchment paper in baking sheet; spread to about 1/2" thick and refrigerate for about 40 minutes or until hardened.
  4. Slice into pieces, similar to peanut brittle and serve.

Tips

Variations

Add 2 teaspoons chili powder and 2 teaspoons cinnamon. The cinnamon removes the bitter taste of the chili powder, leaving just the heat.

Add 1/4 cup dried fruit: chopped dates, raisins, cranberries, etc.
