Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Gluten Free Carrot Cake (Sugar-Free)

Gluten Free Sugar Free Carrot Cake with Chestnut Flour

This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)! I have been planning to make gluten free potato pancakes for some time, now, and finally got around to making them. Gee, it’s been a decade or more since I have had them. Ahhh! – what a delight! I make them with fresh left-over potato pancakes, not instant potatoes. This recipe is gluten free and without any type of flour.
