I already have a few gluten free tortilla recipes: Low-Sodium Gluten Free Tortillas (my first attempt – very similar to Trader Joe’s brand – chewy and a little stiff), Gluten Free Naan Bread (so good, but is thick and calls for instant yeast), and Soft Whole Grain Gluten Free Wraps – Tortillas (when you use Expandex modified tapioca starch these are the best!). If you are craving gluten free blueberry muffins, this sugar-free, or low-in-sugar, version is amazing! They turned out very light, despite not sifting the flour blend. I added 1-1/4 cups fresh blueberries, but you can easily get away with using 1 cup. We just love blueberries! The streusel topping really makes these tender and moist muffins! I hope you enjoy them. I was in the mood for a healthy bread, and knowing many of you have been waiting for me to develop a gluten-free dairy-free egg-free bread recipe, I thought I’d give it a go today. I normally would have began experimenting with light flours. However, for containing many heavier grain flours, this bread turned out amazing. Gluten Free Breaded Chicken using Whole Grain Crackers

Gluten free breaded chicken is no different than regular chicken. I usually use homemade gluten free seasoned bread crumbs, however, this time I wanted something more nutritious. I chose to use Van’s gluten free crackers. They come in several flavors and they’re all whole grain. I used their Lots of Everything flavored crackers. I used chicken breasts for this recipe, however, you can do the same thing with chicken tenders. Meanwhile, they turned out moist and delicious. Enjoy! Gluten Free Lemon Pie

This gluten free lemon pie is a bit different than lemon meringue pie, as it is a bit creamy – not much, just a tad. In addition, it still maintains a bright yellow color. You can use Greek yogurt, as I list below, or sour cream. Just make sure whichever you use is gluten free. Make additional filling if you are not going to top it with whipped cream or Cool Whip. You have your four choices of gluten free pie crust recipes, very flaky, or two more traditional crusts. Hopefully, you find one that calls for an ingredient you already have in your pantry. Enjoy!

Jerk Chicken (Gluten Free)

Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. Flaky Gluten Free Croissants

I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these.
