This recipe can be made with gluten-free low-sodium tortillas or regular gluten-free tortillas. Regular ones are much higher in sodium than the recipe I provide. I made these enchiladas with two different sauces, one for me and one for my husband. He loves the traditional sauce. Many of you may have a particular favorite already in mind. I offer a simple alternative sauce under the many “Tips” I list below. I used to make enchiladas with plain chicken and load it with cheese for flavor, but have learned to give them flavor without the extra calories and cholesterol. You can do both, though. If you skip the cheese you can make this dairy free and it will still have a lot of flavor! Continue reading “Gluten Free Chicken Enchiladas”
Raw Almond Pistachio Avocado Ice Cream
This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Check out my recipe below. Continue reading “Raw Almond Pistachio Avocado Ice Cream”
Gluten Free Onion Ring Sauce Recipe
This onion sauce recipe goes along with my gluten free onion rings recipe, though it has other uses, too. If you are looking for a healthier alternative to Outback’s Onion Ring Sauce, then I think you’ll love this recipe. My husband and I did. Many recipes for onion ring dip contains sour cream and/or mayonnaise. In this recipe I use Greek yogurt and it is made without horseradish, yet it is still spicy. Gluten Free Non-Fat Gourmet Greek Yogurt Salad Dressing Recipe
Several weeks ago I discovered a salad dressing (do not recall where) and thought to myself, “Wow, I bet I can make a Greek yogurt salad dressing similar that that and save a ton of calories!” Well, I made it, changed a couple things of around. Watermelon Smoothie Recipe
The other day I was watching the Paula Deen show and she made water melon coolers. I happened to have had a huge watermelon that I had planned on using when I had company, but didn’t. Making a watermelon smoothie was a perfect way to consume the watermelon fast and watermelon is a great diuretic. I am allergic to citrus so I skipped the lemon juice, but wish I could have used it. But even without the lemon juice, these are
great! And if you choose to add Greek yogurt, it will assist those with candida, though they should avoiding sugary drink. Paula used watermelon, lemon juice and a big scoop of lemon sorbet. Lemon juice is also a great diuretic. I don’t recall her portion sizes on ingredients, but you can’t go wrong with this smoothie recipe, as it is very forgiving. I used Greek yogurt and pineapple juice, but you can use just about anything creamy with any juice you wish. Suggestions for creaminess are: vanilla ice cream, flavored yogurt, whipping cream, etc. All you need is a blender. Enjoy this refreshing watermelon smoothie! You can even make popsicles or other gluten free beverages and cocktails! Continue reading “Watermelon Smoothie Recipe”

Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!
I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole.
