Typically Italian Pine Nut Cookies are made with marzipan or almond paste, however, you may use almond flour / almond meal, ground up, or even ground up pine nuts, as I did. You grind it to the consistency of any nut butter. Flourless cookies are wonderful, usually high in protein, thus lower in carbs. However, carbs still exist in the sugar. You may wish to use a natural sugar substitute, such as birch derived xylitol, if you are watching your carbs closely. Meanwhile, enjoy this pine nut cookies recipe. I definitely did. Gluten Free Lasagna – Chicken Spinach with Creamy Basil Sauce
My experiment for an easy gluten free ravioli turned south. So, I decided to use the filling to layer a gluten free lasagna recipe instead. It really tastes no different than a ravioli, just bigger. This was so delicious! And you’d never know it contained chicken. I’ve included dairy-free, vegan, vegetarian options. If you’re not a spinach fan, use another green such as fresh basil, or even arugula. And of course, the filling may be used for stuffing ravioli, as well. Just refrigerate it until chilled.

Spinach Rice
This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Gluten Free Pizza: BOLD Organics Review and Giveaway
You may already know that I avoid soy most of the time, however, it seems that you always get something you don’t want in almost all processed food. BOLD Organics gluten free pizza is the one exception I would make. Why? Though it contains soy, it is dairy free and contains all organic ingredients. And if you’re dairy free, you know that there is only one cheese around that actually stretches and melts well. At least that is what I thought. The cheese used on BOLD Organics Pizza is wonderful! It’s vegan gourmet. Their meat and sauce is full of flavor. If it hadn’t arrived frozen, I would have sworn it came from a high-end pizza parlor, but better.
