Gluten Free Almond Poppy Seed Teacake

What is a teacake you ask? A teacake is a low cake, never frosted and is sturdy enough to pick up and eat with your hands. Traditionally, it is made in a loaf pan, but you may dress it up a bit by making it in a bundt pan. It is served with tea, but of course, you can eat this gluten free cake with your beverage of choice. You must like garbanzo bean flour to enjoy this recipe as is, or use Bob’s Red Mill Gluten Free Baking Flour. Bean flour has a unique taste, all its own, and is not for everyone. If you like The Grainless Baker Graham Crackers you’ll enjoy this one without any substitutions! You may also wish to consider using vanilla extract instead of almond and adding lots of spices (cinnamon, cloves, etc.) to hide the bean taste. This cake is very moist! I hope you enjoy this gluten free cake! Continue reading “Gluten Free Almond Poppy Seed Teacake”

Commercial Yeast-Free Gluten Free Flatbread (Contains Yogurt)

While watching the Paula Deen Show, I saw her grilling some flatbread, made from a homemade dough. I just had to create a gluten free flatbread recipe and give it a go, myself! My Facebook survey resulted in majority people wanting a yeast-free gluten free recipe and preferred baked (soft), rather than grilled (crispy). So, that is exactly what I created! I was so excited how beautiful it looked, but it tasted just as good! The bread varies in height between 1″ to 1 1/2″. You can use this gluten free flatbread for sandwiches and it makes a great replacement for sourdough bread at the dinner table. You can dip it in olive oil and balsamic. I made sandwiches for dinner with chicken breasts, grilled onion and bell pepper (hubby had cheese, too) and created a balsamic dressing to coat the inside of the bread. I wanted to add avocado, but it would have been just too high for me. It was delish! – my new fave! Enjoy!

New Gluten-Free Certification Label!

There are several organizations that provide a gluten-free certification program in order for manufacturers to affix gluten-free labels on their products. However, there is a new kid on the block in the U.S.! The National Foundation for Celiac Awareness (NFCA), along with Quality Assurance International (QAI), have launched a new gluten-free certification program, requiring less than 10 ppm (parts per million) gluten. The FDA’s proposed amount has been 20 ppm. Continue reading “New Gluten-Free Certification Label!”

Gluten Free Empanadas

Image: Gluten Free Empanadas

Empanadas are a popular pastry found in the Caribbean, the Philippines, Latin America, Portugal, and Spain. The fillings are typically gluten-free. They are filled with various ingredients, whether sweet or savory, depending upon which part of the world they are made. They tend to be on the dry side, therefore, I used a rich creamy, flaky dough in my gluten free empanadas. Adding a juicy filling is advised, however, it will most likely leak out of the pastry dough and burn while baking. Cheese is a common ingredient in savory empanadas to avoid this dryness, and prevent leaking. You can add ground meat: chicken, beef with cheese, or plain cheese, along with sauteed vegetables and spices. If you find them dry you can make a dip, as well -an avocado dip, salsa, sour cream, etc. This gluten-free recipe is made on the Argentina flavor side, yet a little different. What type of filling will you make? Check out the different types of empanada in different parts of the world and choose your favorite or experiment! You’ll enjoy making gluten-free empanadas because you can be so creative!

PF Chang’s Gluten Free Menu Review

PF Chang's Lettuce Wraps

For Father’s Day we ate dinner at PF Chang’s China Bistro. It is not only a great restaurant for those with on a gluten-free diet, but for those with other food allergies, as well. In regards to my other food allergies, I have never had such great service, anywhere! Our server had food allergies, herself, and may have been more in tune with my needs than other servers, their website states that they cater to food allergies and gluten intolerance. I was very impressed! I am so tired of the glares I receive from other servers at other restaurants when I list off my citrus and tomatoes allergies, on top of my gluten sensitivity. Gluten Free Beef Stroganoff Dairy-Free Option)

Image: Gluten Free Beef Stroganoff

Beef Stroganoff is gluten-free, naturally; however, you’ll need to prepare some gluten-free pasta, or eve rice. I remember the first time I cooked this dish. It was the summer between freshman and sophomore year of high school. It was my parent’s anniversary and the first time my mother never came in the kitchen once to watch over me! I was in heaven! They were too when once they tasted this creamy beef dish. Continue reading “Gluten Free Beef Stroganoff Dairy-Free Option)”

Gluten Intolerance and Stress

Vikki Petersen, D.C., C.C.N.

Gluten intolerance, be it celiac disease or gluten sensitivity, creates a lot of stress on the body. Through malabsorption, inflammation and a host of other damaging factors, it is no wonder that the stress gland itself would be similarly affected.

The stress glands are designed to help us adapt successfully to life’s stressors and do so in many ways.

Do you find yourself in a situation where you need to move quickly? This gland will increase your heart rate and bring more blood to your muscles with the result of making you faster and stronger. Continue reading “Gluten Intolerance and Stress”

Sugar Free Dairy Free Gluten Free Doughnuts – Baked

Image: Gluten Free Baked Donuts

I haven’t had a doughnut (donut) since I started my gluten-free diet. I didn’t really miss them, but enjoy the challenge of gluten-free baking. These gluten free doughnuts are baked, making them healthier than the standard recipes, as they are usually deep fried. In addition, some whole grain flours were used to provide additional health benefits, as well as agave and molasses. They taste much like the real thing! I think you’ll be very pleased. You can play around with this recipe substituting 1/4 cup of your favorite flour for one of the others. Add in your favorite baking seasonings or extracts, too. Experiment and have fun!
