Of course, this watermelon recipe can be made in a bowl or atop a with gluten-free ice cream cones or regular. If using a cone you can decorate the cone’s top edge with frosting or whipped cream. I’m fresh out of my Goldbaum’s gluten-free ice cream cones. I gave them all to my grandkids. However you can have more ice cream in a bowl, which is what I enjoy the most! This not only makes a great 4th of July recipe, but a nice cool treat all summer long. I had so much fun making this! I’ve never scooped such a large watermelon ball before, but it was very easy. Watermelon Stars
This is such an easy and fast gluten free dessert to make! Frost bottom edges with sweetened whipped cream, white frosting, or cream cheese frosting (all recipes below). You can also use canned whipped cream. If desired, add blue food coloring to frosting for decorative stars or leave white. I like to use natural food coloring made by Select Tea. It’s gluten-free and vegan. I left mine white. Adding a single blueberry on top and/or one in the middle of each decoration at the bottom brings color to this dessert. If you’d like, you can frost the entire top of the star and add multiple blueberries and/or other red berries, and skip the decorative frosting, or do both. This recipe can be made low-carb using sugar substitutes. This definitely makes a great 4th of July desserts, and definitely a conversation piece! Happy 4th of July to everyone in the U.S.! Gluten Free Chocolate Mochi Ice Cream
Mochi is a naturally gluten-free Japanese dessert, served during Japanese New Year and year round, usually in the form of a very starch rice cake. However, that same starchy rice dough is used to wrap frozen balls of ice cream. Mochi ice cream is a unique dessert that everyone should, at least, try once! Kids would love to make them! The little ones can help. You can add food coloring to the dough, and flavored extracts, as well. I like to use natural food coloring or cocoa powder. Strawberry Gluten Free Frozen Yogurt
While most frozen yogurt recipes are made with plain yogurt, I used Greek yogurt, as it is more easily digested than regular yogurt and contains good live bacteria, if you purchase the good kind. I use FAGE Greek yogurt. In addition, instead of using cow’s milk (non-fat is traditionally used), coconut milk or gluten free rice milk may be substituted. I used homemade raw almond milk. You can use any yogurt or milk you desire to fit your dietary needs. This frozen yogurt is sweetened with agave syrup which reacts slower on your glycemic (blood sugar) levels instead of all at once like table sugar. However, if you desire to use table sugar or evaporated cane sugar, you may add it all in the pan when cooking the strawberries. Gluten Free Rice: Rice-A-Roni Style Chicken and Broccoli
The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. Their supermarkets rolling out the program will include Acme, Albertsons, Cub Foods, Farm Fresh, Hornbacher’s, Jewel-Osco, Shaw’s/Star Market and Shoppers Food & Pharmacy. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups
If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse
Imagine a no-cook sugar-free chocolate mousse that is also gluten-free, dairy-free, sugar-free, soy-free, corn-free, vegan and more! – that takes 5 minutes to whip up! Of course, you’ll need to soak one of the natural sweeteners, but that just takes about 4 hours. What is that sweetener? Dates! If you’re diabetic or low-carb, use a bit of stevia instead. Inspired by a few of my Facebook friends, I decided to create more gluten-free, sugar-free recipes. I’ve been meaning to grill some fruit but haven’t cleaned the grill yet. Unexpected guests? This is sure to please, as well as a great conversation topic! You can be sure I’ll be creating several versions of this recipe in the very near future. Perhaps with strawberries and bananas (not avocado and strawberries because that will turn to a brown color), other fruit and added nuts, like macadamia nuts or walnuts.
