Caramelized Onion

The sweetness of caramelized onion adds incredible flavor to many dishes.

Ingredients:

  • 1-1/4 large yellow onions, sliced
  • 1 teaspoon olive oil
  • 1 teaspoon unsalted butter (or more oil)
  • 1 teaspoon granulated sugar (optional)
  • Salt, to taste
  • Water, as needed

Instructions:

  1. Add the oil and butter to a heavy skillet (not non-stick) over medium-high heat. Add onion and stir to coat. Cook for 10 minutes.
  2. Sprinkle the sugar and salt over the onion and continue to cook for an additional 50 minutes, stirring occasionally, not often. (Stirring often prevents them from browning.) Once in awhile, sprinkle some water on the onion to prevent them drying out and scrape any stuck on brown bits from the skillet once in awhile.
