In my book, The Gluten-Free Good Health Cookbook, I talk about the importance of eating seeds to neutralize inflammation and strengthen the immune system. They are nutritional powerhouses packed with fiber, vitamins, minerals, protein and healthy oils. But many of us do not eat seeds on a daily basis, unless it is on a gluten-free bagel. Chia Seeds originated in South America and was a staple in the diets of Ancient Mayans and Aztecs. The seeds are high in dietary fiber, omega-3 fatty acids and antioxidants. New Gluten-Free Certification Label!

There are several organizations that provide a gluten-free certification program in order for manufacturers to affix gluten-free labels on their products. However, there is a new kid on the block in the U.S.! The National Foundation for Celiac Awareness (NFCA), along with Quality Assurance International (QAI), have launched a new gluten-free certification program, requiring less than 10 ppm (parts per million) gluten. Gluten Intolerance and Stress

Gluten intolerance, be it celiac disease or gluten sensitivity, creates a lot of stress on the body. Through malabsorption, inflammation and a host of other damaging factors, it is no wonder that the stress gland itself would be similarly affected.

Gluten Cross-Contamination

I write this as a reference for those new to the gluten-free diet, but especially for those who have high intolerances to gluten, such as those with celiac disease and allergies to wheat. Gluten cross-contamination refers to food that has come in contact with gluten (wheat, rye and barley). However, oats are often listed as a glutenous product, though they are not when they 100% oats, because they often contain high amounts gluten. I hear more and more stories from individuals who are on a gluten-free diet and/or have celiac disease, who cannot tolerate any grains whatsoever, not just gluten grains (wheat, rye, barley and contaminated oats).  They go gluten-free and grain-free! Some individuals do not fully recover on a gluten-free diet alone because they have other allergies or intolerances. There is no doubt that eating out gluten-free is not an easy task, at least not for those with gluten-intolerance. Dealing with rude waiters /waitresses can ruin a meal in no time. Then when your meal comes and it has some gluten ingredients, sending it back adds fuel to the fire. Many of those with a gluten-intolerance or gluten-sensitivity are plagued with other food allergies and intolerances which multiples the problems.  Below I have listed some things that may help some, especially those new to the diet. Celiac Disease News: A Vaccine is in Phase I Trials

Dr Robert Anderson, PhD from Australia announced this month that after several years of research his vaccine was ready for a Phase I trial. I remember meeting Dr Anderson 2 years ago at a National Foundation for Celiac Awareness conference where he shared with me his goals about this research.
