Gluten Free Malaysian Chicken Satay (Fish-Free, Dairy-Free, Refined Sugar-Free Options)

What can you place on a stick to eat besides shish kebobs and corn dogs? Chicken satay! Satay originated in Indonesia, but there are also Asian versions. Satay is different than shish kabobs, mainly in the sauce. Instead of barbecue sauce and such, Thai satay recipes call for coconut milk and curry. Indonesia satay, also known as sate ayam, calls for ketchup or tomato sauce and sugar. Malaysian satay calls for such ingredients as belacan (shrimp paste), galangal (a relative of ginger), and lemon grass, which are not available to everyone. This is my own unique gluten free, soy free, Malaysian version of satay using more commonly known ingredients. You may use chicken or a tender cut of beef or pork. Pork tenderloin is wonderful! Gluten Free Taquitos or Flautas

I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free  by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas). Coconut Whipped Cream – Dairy Free

This is a wonderful addition to your gluten free desserts! I found a few recipes online for coconut whipped cream, but I could tell that none of them would do the trick. One had it right, though, in using just the cream of a can of coconut milk. Yet it called for regular sugar, versus powdered. If you’re vegan, or prefer not use highly processed powdered sugar, you may consider using powdered evaporated cane sugar. As of last fall, I purchased some at Trader Joe’s. Twisted Yeast-Free Gluten-Free Breadsticks with Cheese

These gluten free cheese breadsticks taste cheesier than the usual recipes because they are rolled in cheese, with only a little cheese inside. I have found that even if I quadruple the amount of cheese inside, you still do not taste as much cheese compared to these. This particular recipe can be twisted which makes for a more elegant presentation. Similar to pizza crust, they are crunchy on the outside and doughy on the inside. You may bake them for a shorter time if you wish your gluten free cheese breadsticks softer. Since my husband approves, and he eats gluten, he’s the best to judge. He loved this recipe the best. He dipped them in pizza sauce as an appetizer. I’m sure Super Bowl Sunday he’ll be asking for this gluten free recipe. Enjoy! My hubby sure did! Gluten Free Pizza Rolls

This gluten free pizza rolls recipe is handy for any party, or just for a snack. The dough is much like pie crust, and can be filled with any filling you desire. I used a mixture of homemade gluten free pizza sauce and shredded mozzarella cheese. With what will you fill your gluten free pizza rolls? These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

Gluten-Free Snacks: Spiced Nuts or Agave Candied Spiced Nuts

With the holidays soon approaching you may find these gluten-free snack recipes will come in handy. It’s definitely less expensive than purchasing canned nuts. These spiced nuts make a great everyday gluten-free snack, as well. Use your favorite nuts. I would have definitely added some macadamia nuts, but I was out. You can change the spices to fit your tastes, as well. For Halloween, use allspice, pumpkin spice, and cinnamon with pumpkin seeds! Mix up your gluten-free snacks with mixed nuts.
