After three attempts, I not only created a gluten free gum free bread recipe but also extended the shelf-life (countertop life) to about three days. Its texture and flavor are wonderful. I created this recipe because xanthan gum and guar gum causes a laxative effect for one of my cookbook recipe testers. I’ve heard this from other people as well. I already have this Glute-Free Paleo-Style Gum-Free Bread Recipe, but I wanted to create a gum free gluten free recipe based on my favorite gluten-free bread recipe, which is available to everyone.  Give it a try!

My raved about oat bread just got better. With a couple of minor changes, it now reminds me of the gluten-filled shepherd’s bread that I used to purchase at my local grocery store. You can make this gluten free oat boule right in your oven if you own a Dutch oven. Use a 4 or 5-quart. (Use up to a 7-quart, if that’s all you have. It’ll just be lower and wider.) It’s soft yet has a crunchy bottom crust which eventually softens if you leave it out at room temperature. It will keep it’s crunchiness if you freeze it until consumed. You may have seen my recent gluten free bread recipe using no added starch. I’ve taken it a step further today, by creating a gluten free whole grain bread recipe using no added starch that is also perfect for sandwiches. That’s right! It is free of tapioca, potato, arrowroot, and corn starch yet it’s soft enough for sandwiches. There are no added starches whatsoever. Using a combination of rice and sorghum flour along with other ingredients, these gluten free hamburger buns are truly delicious. If you have a barbecue or grill available, toast them to make them crunchy. Serve with burgers, sausage, or your favorite vegetarian fare.

My husband often stays at Hyatt hotels. He was recently raving about their Gallery Breakfast Sandwich which consists of a fried egg, bacon, and smoked gouda cheese on a potato roll, filled with gluten, of course. It looked delicious and I had been meaning to create a gluten free potato roll recipe for some time. I finally did! I converted a combination of this recipe from Taste of Home and King Arthur’s Easy Potato Rolls Recipe to gluten free. They turned out delicious! I just ordered some gouda cheese so I can make them at home and see what all of the fuss is about, but made this one with cheddar. This gluten free Colomba recipe may be served as a sweet bread on Easter with ham or at breakfast or brunch. It is an Italian tradition. You may form it into its traditional dove shape by using paper molds or use a standard ring baking pan as I did. This bread is tender and not as sweet as cake, but sweeter than bread. Make it with dairy or dairy-free. Add your choice of dried or glazed fruit. It’s simply delicious! It’s a little like a bear claw pastry. Happy Easter! Being raised in a half Italian, Catholic family, surprisingly, I wasn’t familiar with Italian Easter Pie until I ran across a recipe couple of years ago. It contains a sandwich filling which bakes right inside the bread dough. I’ve had it on my list of to do’s ever since. I finally created a gluten free Italian Easter pie. The dough is much like flatbread or rustic Italian pizza. The filling is traditional using ricotta cheese, ham, and eggs. I hope you enjoy it. It’s perfect for an Easter brunch.
