Gluten Free Indian Potato Pancakes, Tomato Chutney, and Basmati Rice

Containing common and easily obtained Indian spices, these spicy gluten free potato pancakes make an incredible gluten free side dish. Make the easy tomato chutney or your favorite dipping sauce. I even enjoy sweet red chile sauce from a bottle. Adjust the heat on these potato pancakes to your liking. I like to add a little red hot chili oil when serving them plain. I didn’t realize how difficult it would be to make the perfect gluten free buttermilk pancakes recipe without white starch and gum. But I did it! Using Ryze Gluten Free Flour Mix – Yellow Bag, I developed this high-ryze (pun intended) pancakes recipe. If you wish to reduce or eliminate refined starch and gum (some people experience digestive issues from gums), you have to use this mix! (Stay tuned in for my upcoming review of both of their mixes.) Be sure to see the tips section for a feather-light version that melts in your mouth, but is a little extra work. The standard version is depicted in the photo. Cannoli is an Italian dessert, tubes of crisp pastry, filled with sweetened ricotta cheese. Ricotta makes the most incredible pancakes. Also sweetened with sugar, these gluten free ricotta pancakes may be made extra-fluffy or traditional. Top them with a fruit puree or pure maple syrup. (Some traditional syrups contain gluten.) Serve your gluten free cannoli pancakes for breakfast or brunch. Your guests will not only be impressed, but they’ll be trying to guess the ingredients. Gluten Free Johnny Cakes

Johnny cakes, also known as johnnycakes, jonnycakes, jonny cakes and hoecakes, are similar to pancakes, but they contain some hominy grits, or cornmeal, in this case. Using my recipe for gluten free bisquick or Betty Crocker’s store-bought brand, this recipe is easy to make and tastes delicious. It makes light and fluffy pancakes with the grains of corn.
