Ground Beef Recipe: Gluten Free Risotto Casserole
Using my basic gluten free risotto recipe I created this delicious casserole. It is fully of delightful aromas as well as flavors. The beef mixture cooks up in a matter of a few minutes. Basic Gluten Free Risotto
There are all sorts of possible add-ins to this gluten free risotto recipe. However, if you wish to make a simple addition, simply adding a bit of grated parmesan/romano cheese will do the trick. I have served this rice with roast and green beans; and then used it in a ground beef casserole the following day. I added left over veggies, creating a very flavorful casserole. Baked Chicken Thighs Recipe (Gluten-Free)
I really had to dig deep in the memory banks for this baked chicken thighs recipe, and I’m so glad that I did. It was delicious! I haven’t made it in years, and I came to realize there really isn’t much to this recipe at all. I was at my Dad’s last week and though he has limited gluten free ingredients and supplies, I am usually able to whip up most basic recipes. This really is an easy gluten free recipe. If you’d like to make it lower in calorie, substitute some of the butter or buttery spread for a bit of gluten-free chicken broth. Enjoy! Dad did!

Red Beans and Ham
When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. Gluten Free Pork Tenderloin
Whether cooking for a small group or a large crowd, gluten free pork tenderloin is an easy, yet elegant main course. I chose to cook two pork tenderloins, one 2.75 pounds, and the other 2.65 pounds. A half pound per person is sufficient, and will most likely yield some left overs. This gluten free pork tenderloin recipe is no different than any other pork tenderloin recipe, other than gluten free starch was used to thicken the gravy. Gluten Free Spritz Cookies Made by Hand
These gluten free spritz cookies are popular in Scandinavian countries during Christmas time. You can even make them with a device. They are a butter cookie either made using a cookie press, pastry bag, cookie cutter, or handmade shapes. Not having a cookie press myself, yet, and since the dough was too thick for a pastry bag, I chose to experiment with different methods of joining balls of cookie dough together to make my gluten free spritz cookies. I was hoping this would help those who cannot afford a cookie press. I created 1/2 teaspoon balls of dough, either using 5 or 6 balls, and filling the center with the same size or smaller balls. I found the smaller balls, close together, work best, seen in the cherry filled cookie in the photo below. Of course, the traditional version is not gluten free, however, just replacing the flour for gluten free flour and starches, and adding a bit of baking soda and xanthan gum results in great gluten free spritz cookies. Gluten Free Glazed Meatballs – All Beef
These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze.
