Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, “Why not a gluten free pancake recipe?” There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline’s Gluten Free Pancakes recipes. They were delish and I feel that they are a bit more healthy than a typical recipe. These were delish, and are dairy-free and egg-free! Enjoy! Soft Gluten Free Dinner Rolls Recipe

Image: Soft Gluten Free Dinner Rolls

I had put off developing a soft gluten free dinner rolls recipe, for too long. So, I made it a priority, and I am so glad that I did! I am not a big bread eater, but I just cannot stop myself with these rolls! They are not grainy at all. They are something my husband loves during the holiday, and I was certainly not going to make him rolls with gluten! When he got home he gobbled up many. Since they’re so easy to make, I’ll have to make another batch of these super soft gluten free dinner rolls! Enjoy! Continue reading “Soft Gluten Free Dinner Rolls Recipe”

Gluten Free Fruit Cake – Fruitcake

I have had a few requests for a gluten free fruit cake recipe. I created a lighter fruit cake and lessened the typical amount of sugar, glazed fruit and baking temperature, because I am not a fan of fruit cake, at all, even gluten free fruit cake. The adjustments were perfect, as is this gluten free fruit cake recipe, now, at least for me. This fruit cake is not too sweet, just the way I like it! See the tips below for a more traditional fruit cake. Meanwhile, enjoy this gluten free fruit cake recipe, a traditional British Christmas Cake, and the holidays! Continue reading “Gluten Free Fruit Cake – Fruitcake”

Gluten Free Cornbread Stuffing Recipe with Sausage Option

Image: Gluten Free Cornbread Stuffing - Dressing

The only gluten free stuffing (some say dressing) that I care for is the kind that has been baked in a bird, whether a turkey or a chicken. However, this gluten free cornbread stuffing recipe is very good, after two attempts, and I didn’t even have it stuffed in a bird when testing it. Of course, a bird’s juices surely provides more flavor. This gluten free cornbread stuffing recipe has plenty of flavor on its own, and is perfect for those who do not care for sage, though it may be added. I’ve also added dairy-free and vegan/vegetarian options. Enjoy and have a wonderful, fun filled Thanksgiving. Among many other things, I give thanks for gluten free stuffing — and elastic waste pants! Continue reading “Gluten Free Cornbread Stuffing Recipe with Sausage Option”

Gluten Free Sandwich Bread Recipe II

I love experimenting with my basic gluten free sandwich bread recipe, changing flours, mostly. This time I used regular grain white rice flour and sorghum flour, along with the usual starches and other ingredients. One tip is to use more tapioca flour/starch if you want a lighter bread, which you can try on this recipe. I’ll give this a try next time by switching the amounts of tapioca and potato starch. Enjoy this gluten free sandwich bread for sandwiches, french toast or toast.

Gluten Free Protein Bar Recipe – Raw Revolution-Style Bars

I absolutely love the Raw Revolution Spirulina and Cashew 100 Calorie Bar! This gluten free protein bar recipe is a healthy and tasty choice, with or without the spirulina powder. Use your favorite nuts, but cashews are my fave! Raw Revolution Spirulina and Cashew Bars are made with cashews and a bit of almonds. As an option, you can throw in some chunkier pieces of nuts at the end. Enjoy this healthy gluten free protein bar recipe. I sure have! Gluten Free Sweet Potato Muffins

These gluten free sweet potato muffins have the weight and texture of a quick bread, such as banana bread, but perhaps a little lighter. They are very moist, and more importantly, packed with nutritious ingredients which I wouldn’t mind giving my grandchildren. And being that I used xylitol instead of sugar, I look forward to using them as a healthy snack for myself more often. These gluten free sweet potato muffins would make an excellent substitution for cornbread this Thanksgiving, as well. And they are a great way to use left over sweet potatoes! That was my reason for creating this recipe. Enjoy! Continue reading “Gluten Free Sweet Potato Muffins”

Gluten Free Fluffy White Frosting

Image: Gluten Free Fluffy White Frosting

Because so many of the cake recipes that call for frosting on this site call for cream cheese, I thought a nice fluffy white icing recipe was in order for those who are not only gluten free, but dairy free. This fluffy white frosting recipe is great because of the color. It is actually white (even with the use of regular vanilla), instead of off-white from so much butter/margarine. If you wish the same white color, but wish to use additional vanilla for flavor, it is suggested to use clear vanilla. There are a few brands that advertise they are gluten free. This fluffy white frosting makes a great wedding cake frosting, too! Enjoy! Continue reading “Gluten Free Fluffy White Frosting”

Corn Free Gluten Free Sweet Potato Spoon Bread

Image: Corn-Free Gluten-Free Sweet Potato Spoon Bread

Even gluten free sweet potato spoon bread usually contains cornmeal, but for my corn free readers I thought I would make a corn free version. You can definitely substitute half of the flour for some cornmeal which will need to be cooked in the milk prior to adding it to the food processor or blender. However, my husband really enjoyed the corn-free version, and he’s a cornbread lover, and I hope you enjoy it, as well.

Note that this gluten free sweet potato spoon bread bakes like a souffle, rising and pulling away from the sides of the dish. Continue reading “Corn Free Gluten Free Sweet Potato Spoon Bread”
