Gluten Free Sugar Free Carrot Cake with Chestnut Flour

This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)! Different Cannoli Filling – with a Twist

Gluten Free Cannoli with Chocolate Potato Filling

I just posted my Chocolate Potato Truffles Recipe and was pleasantly surprised to find the texture of the filling to be very similar to the traditional ricotta cannoli filling, but this filling contains walnuts. If you’re looking for different cannoli filings, this is a great alternative! Often one adds chopped pistachio nuts at the ends of the cannoli, therefore I used chopped walnuts on these. The walnuts in the filling make a good substitute for the chopped chocolate in the traditional cannoli filling, but you can also use chocolate if you wish. I have recently used gluten free chocolate mousse as a filling on Easter and everyone really enjoyed it. I’ve also used Orgran’s Chocolate Mousse and with added powdered sugar and cocoa. My husband loved it and I know the rest of my family went crazy over this one. I sent the photo below to my sister ahead of time to make her drool! It worked! Gluten Free Mashed Potato Chocolate Ganache Truffles

I was watching “Paula’s Home Cooking” on The Food Network channel the other day, and Paula showed how to make Chocolate Covered Potato Eggs (for Easter). Her recipe had a white filling and inspired this chocolate truffle recipe with walnuts I just created. My favorite See’s Easter egg has a chocolate cream and walnut filling, therefore, this is what I made today. I added cocoa powder and walnuts; substituted stevia and agave syrup for the powdered sugar; and changed its shape into the typical round truffle. This is a healthier truffle recipe than most. I dipped some in chocolate and froze them; rolled others in unsweetened cocoa powder; and others in walnuts. My husband found it hard to believe it contained mashed potatoes. Give this recipe a try. She is one of those that does not measure anything, but with some thought, she was able to come up with some approximations. I turned it into a gluten free macaroni and cheese recipe using a variety of gluten free pastas and topping it off with homemade seasoned gluten free bread crumbs. Gluten Free Chicken Enchiladas

This recipe can be made with gluten-free low-sodium tortillas or regular gluten-free tortillas. Regular ones are much higher in sodium than the recipe I provide. I made these enchiladas with two different sauces, one for me and one for my husband. He loves the traditional sauce. Many of you may have a particular favorite already in mind. I offer a simple alternative sauce under the many “Tips” I list below. I used to make enchiladas with plain chicken and load it with cheese for flavor, but have learned to give them flavor without the extra calories and cholesterol. You can do both, though. Raw Almond Pistachio Avocado Ice Cream

This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Gluten Free Onion Rings Recipe II

This gluten free onion rings recipe is sweetened with stevia, salted with sea salt and dairy- free. UPDATE: I now use Gluten Free Chef Rob’s recipe which calls for gluten-free beer. However, you can make it almost just as good using sparkling water. It just has a little less flavor and you have to fry them longer to make them crispy. They’re super crispy! I made this gluten free chili without tomatoes because I have a tomato allergy. I also made this chili without beans and is gluten-free. I miss the sweetness that tomatoes bring to a good chili recipe, but I found a way to sweeten it up this recipe without tomatoes. It can be made as mild or hot as you wish.
