These gluten-free meatball appetizers may be made sweet or savory. They are delicious either way. Make them with all beef or beef and pork. My husband loves them using half and half without any sauce. Which way will you make them? Continue reading “Gluten Free Meatball Appetizers (Sweet and Spicy or Savory)”
Three-Layer Gluten Free Peanut Butter Cup Cake
The first time I made this cake, I used 5-1/2-inch round cake pans that I found on eBay for a steal of a deal. However, for my husband’s upcoming birthday party, I made an 8-inch three-layer version and froze it. I decorated this one differently as I needed to leave room for the birthday message. It’s a great cake to make in advance. You can defrost it the night before the event, covered, at room temperature. This cake is perfect for Valentine’s Day as well if your sweetheart is peanut-butter-cup-lover.

Gluten Free Chocolate Marble Cheesecake with Caramelized Pecan Crust (Dairy-Free Options)
In this recipe, I reversed my previous gluten free marble cheesecake in that the base is vanilla and the marbling is chocolate. I also used a different crust. You have to try it! Microwaved Gluten Free Molten Lava Mug Cake (with Dairy- and Egg-Free Options)
I saw chef Ryan Scott make a molten lava cake in the microwave on The Today Show. So, I played around with his recipe to make a gluten-free molten lava cake. It fits perfectly with my collection of gluten free microwaved mug cake recipes. So, I had to convert it to gluten free. Check it out! It’s delicious! Can’t do flour? Try my baked Gluten Free Lava Cake Recipe made with almond flour. Continue reading “Microwaved Gluten Free Molten Lava Mug Cake (with Dairy- and Egg-Free Options)”
Gluten Free Campfire Apple Crisp or Crumble (With or Without Oats)
Whether you are going camping or want an easy to dessert you can make on the grill during those hot summer days, this gluten free campfire apple crisp recipe is perfect. It’s a light dessert that you can easily serve immediately after a meal. It’s tastes like apple pie filling. Crisps traditionally contain oats, but you can omit the oats if you are not tolerant and turn the recipe into a crumble. Either way, it’s delicious, easy to make, and very little clean up as you make them in aluminum foil. Continue reading “Gluten Free Campfire Apple Crisp or Crumble (With or Without Oats)”
Gluten Free Pull-Apart Potato Rolls (Gum-Free Option)
My husband often stays at Hyatt hotels. He was recently raving about their Gallery Breakfast Sandwich which consists of a fried egg, bacon, and smoked gouda cheese on a potato roll, filled with gluten, of course. It looked delicious and I had been meaning to create a gluten free potato roll recipe for some time. I finally did! I converted a combination of this recipe from Taste of Home and King Arthur’s Easy Potato Rolls Recipe to gluten free. They turned out delicious! I just ordered some gouda cheese so I can make them at home and see what all of the fuss is about, but made this one with cheddar. Gluten Free Spanakopita
This gluten free spanakopita recipe is a Greek tradition. The filling consists of spinach, cheese, onions, egg, and seasoning. If you are vegetarian, you can substitute the cheese with tons of fresh herbs and silken tofu or use dairy-free cheese like Daiya or Follow Your Heart. Instead of using my Gluten Free Phyllo Dough Recipe, which is the traditional dough bakers use, I used my Gluten Free Puff Pastry Recipe to produce a puffier dough.
You may have previously seen the folded version, but rolled spanakopita is also a well-known way of making them. I prefer to roll them when serving to guests so that they know what they are eating. If it were up to my husband, the dough lover, he would prefer the folded method as it produces more crust.
I list out several choices of cheese to use in your gluten free spanakopita. I find it’s best to use a variety of cheeses. It combines all of the best flavors and texture from salty to creamy. Use what you have on hand or what you enjoy the most.
This is one way of getting kids to eat spinach. If you wish to make it healthier, feel free to substitute the leeks with additional spinach. Using leeks is a rural Greek tradition. Continue reading “Gluten Free Spanakopita”
Gluten Free St. Patrick’s Day Cookies
This recipe for gluten free St. Patrick’s Day cookies is incredible! They’re in between a shortbread and sugar cookie. Shortbread cookies contain more butter than sugar cookies which makes them a bit softer and richer. Everyone loves these cookies. Adding a little green or Irish theme makes them that more special.
Also, be sure to read my article on Gluten Free Food Coloring at the below link. If you’re dairy-free, be sure to see my suggestions on how to make gluten free cookies to your liking using Earth Balance in the Cut-Out Cookie recipe. In addition, I have added a substitute for gluten-free meringue powder in my Royal Icing recipe. Enjoy your St. Patrick’s Day and be safe! Continue reading “Gluten Free St. Patrick’s Day Cookies”
