I developed a bread pudding recipe for KitchenAid’s 6-Quart Slow Cooker with Easy Serve Lid back in 2012. I have played around with the recipe a couple of times since then. I have doubled the custard which I enjoyed much better. My husband is a bread lover and likes it dense with a single custard amount. So, it’s really up to you. Recently, I used the standard amount of custard, but I threw in some Comstock apple pie filling. (You can use homemade, if desired.) Gluten Free Coffee Semifreddo

Ice cream makers are perfect for making semifreddos, a semi-frozen dessert. Coffee semifreddo is a dessert I enjoy serving dinner guests for a little pick-me-up/caffeine boost, thought it is lightly flavored. You can make the pudding in advance and keep refrigerated. Then about 20 minutes prior to serving, freeze it up in your ice cream maker and fold in the whipped cream. Those who do not make homemade desserts are usually fascinated with the process and thoroughly enjoy this light treat. You can vary the recipe by adding various mix-ins. Gluten Free Pumpkin Creme Brulee

Most creme brulee recipes are naturally gluten-free, but when you add canned pumpkin puree, you have to be careful that the manufacturer has not added any gluten containing ingredients. I used evaporated cane sugar to caramelize my gluten free pumpkin creme brulee as the sugar granules are larger. Coarse sugar is the best sugar to use in this case. However, granulated sugar works okay, too. Before you know it, Thanksgiving will be upon us and I thought you may like to use this recipe for one of your desserts. It’s great because you can make it in advance and it is an recipe. Enjoy the fall season.

Gluten Free Mocha Bread Pudding

Gluten Free Chocolate Mocha Bread Pudding

While visiting good friends out of state, my closest friend made these delicious mocha gluten free bread puddings. Knowing that I am gluten-free, she asked me to bring my own bread. (I’m allergic to tapioca therefore it’s difficult to buy bread for me.) I brought some homemade oat bread, but Udi’s or any absorbable gluten free bread will work well. I changed the direction to make it a bit easier. They were delicious, full of chocolate and coffee flavor. While Kahula is gluten free, you may make them non-alcoholic. Enjoy! They were fabulous! Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! Lemon Panna Cotta (Egg-Free Custard) with Bourbon Sauce (Gluten-Free)

Lemon panna cotta is an Italian, egg-free custard. Panna cotta can be made in several different flavors with an array of sauces. It is often served with biscotti, an Italian biscuit-cookie. You will find this particular recipe to include your choice of plain bourbon sauce or walnut bourbon sauce. I’ve included the recipe for the garnish, candied lemon peel, as well. I hope you enjoy this recipe. It appears to be a lot of work, but if you use plain lemon peel for garnish, it’s done in a snap.
