Gluten Free Apple Bread Pudding

I developed a bread pudding recipe for KitchenAid’s 6-Quart Slow Cooker with Easy Serve Lid back in 2012. I have played around with the recipe a couple of times since then. I have doubled the custard which I enjoyed much better. My husband is a bread lover and likes it dense with a single custard amount. So, it’s really up to you. Recently, I used the standard amount of custard, but I threw in some Comstock apple pie filling. (You can use homemade, if desired.) This gluten free apple bread pudding turned out delicious and it’s made in a slow cooker!

Gluten Free Apple Bread Pudding

A gluten free bread pudding made in a crockpot. The custard has the flavor of creme brulee. However, the apple pie filling makes it delicious.

Ingredients:

Instructions:

  1. Cut the pieces of apples into small, bite-size pieces. Save the gel filling for another recipe. (It makes a great substitute for jelly on toast.)
  2. Make the bread pudding as directed in the link above. However, after you add the bread to the slow cooker, tuck pieces of apples between and underneath the pieces of bread. In addition, omit the sliced almonds and substitute the almond extract for vanilla.
  3. Continue making the recipe as directed.
  4. Slice and, if desired, set under a broiler on high heat for a few seconds until crunchy or brown on top. Serve immediately.
