Rather than go through the trouble of making a cake or pan of muffins, make one single portion right in your microwave, toaster oven, or oven. It’s a wonderful way to control portions. I love this recipe for fingerling potatoes for a few reasons. I don’t have to peel the potatoes. I don’t have to slice small potatoes. The best thing is that they are incredibly delicious. After three attempts, I not only created a gluten free gum free bread recipe but also extended the shelf-life (countertop life) to about three days. Its texture and flavor are wonderful. I created this recipe because xanthan gum and guar gum causes a laxative effect for one of my cookbook recipe testers. I’ve heard this from other people as well. Containing common and easily obtained Indian spices, these spicy gluten free potato pancakes make an incredible gluten free side dish. Make the easy tomato chutney or your favorite dipping sauce. I even enjoy sweet red chile sauce from a bottle. Adjust the heat on these potato pancakes to your liking. I like to add a little red hot chili oil when serving them plain. Having picked up a couple of 1-1/2 pound packages of ground organic turkey at Costco, I wanted to create a new flavorful recipe using one of them. So, I created these gluten free taco zucchini boats. I saved half of the filling to fill bell peppers. I used the other package to substitute the chopped chicken breast in my Asian Rice Cups recipe. They’re both delicious.
