Gluten Free Seafood Gumbo
This spicy gluten free seafood gumbo consists of shrimp and red snapper and is a Cajun favorite, especially during Marti Gras. Gumbo stew is a Louisiana tradition and is famous for its dark roux (flour and butter). My mother was born in Louisiana; therefore, I think of her often when I make southern dishes. Gumbo is known for its dark roux and file spice. Adding in the holy trinity (onion, celery, and green peppers, some heat from ground cayenne pepper and hot sauce, and you have yourself an awesome creole dish. Feel free to substitute the red snapper and shrimp for your favorite seafood, firm fish, chicken, or sausage. If you read anything on this page, you must read how Alton Brown makes a dark roux!

Classic Gluten Free Minestrone Soup
It may at first appear that would not need a gluten free minestrone soup recipe and that it is naturally gluten free. However, you will need to know which brands of broth are gluten free, as well as gravy enhancers, if using. In addition, when storing leftover soup containing pasta, it tends to get soft and mushy. To prevent this, using my homemade egg noodle recipe avoids this problem. You may also cook the pasta separately. Check out the brands of pasta I enjoy most. Gluten Free Dairy Free Candy Melts Substitute Recipe (Corn-Free Options)
You may find it difficult to find gluten free dairy free candy melts as most contain dairy. In addition, it is hard to find gluten free dairy free white chocolate to coat cake pops or truffles. Wilton’s does make one that is gluten free, but not dairy-free. To learn more about Wilton gluten free products, see discussion here from 2011. However, the recipe below works well as a substitute. If you have corn allergies, consider using Lyle’s Golden Syrup or gluten-free brown rice syrup, such as Lundberg brand instead of corn syrup. They will just turn out a bit darker in color. Mini Fried Gluten Free Pies: Sweet or Savory (Dairy-Free)
When you just cannot deal with rolling a double gluten free pie crust, these mini fried gluten free pies are ideal. However, unlike pie crust, they are crunchy. You may fill them with sweet or savory fillings. For my test recipe I just used Comstock fruit pie filling. Both Comstock and Wilderness brands are gluten free. These little gems are similar to empanadas (Spanish pies), but instead of baking them, you fry them. When empanadas are made in smaller sizes to serve as appetizers, such as these, they are named tapas. You may wish to check out my savory gluten free empanada filling (the crust on that recipe is a traditional gluten free pie crust), or my homemade sauteed apples for a healthier filling, if you’re not a quick open-a-can type of person. Gluten Free Potato Leek Soup
My 99 year old father is visiting with us for a couple of weeks and he eats plenty of soft foods. Cream soups are his favorite. He’s grows tired of the same soups. Though he still enjoys my Creamy Broccoli Soup and Creamy Cauliflower Soup, I thought I would make him something new.
