Cup4Cup Gluten Free Multigrain Bread Mix

Cup4Cup now makes a gluten free multigrain bread mix that contains very little white refined starch, in this case, tapioca flour. All of the other flours are made of whole grains such as oat, millet, sorghum, buckwheat, teff, as well as flax seed meal. The great thing about this copycat recipe is that you can change whatever you cannot tolerate. Provided are substitutes for oat flour, xanthan gum, and even eggs. This recipe is naturally dairy-free.

You don’t need dairy or corn syrup to make delicious, chewy caramel. This recipe uses healthy substitutes for butter, cream, corn syrup, and granulated sugar. Check out the ingredients list and see for yourself. I’m sure you’ll be sold on the alternatives, too. There is a slight flavor of coconut, but I swear you won’t care. Several manufacturers make similar traditional cookies like Signature Select, Great Value, and Nabisco calls theirs “Pinwheels”. This gluten free fudge marshmallow cookies recipe is comprised of a crunchy chocolate cookie, topped with marshmallows, and covered in chocolate. I prefer these cookies over See’s Candies marshmallow treats, which says a lot because those contain caramel. The cookie is the key to this recipe! However, many others appreciate the process that I created to adhere the marshmallows to the cookies. Enjoy!

Recently, I saw a photo of cornbread waffles and chili and just had to create a gluten free cornbread waffles version. While my chili over-powered the flavor of these amazing waffles, I love them, even plain, without syrup. That’s unusual for me. They really are that tasty. Give them a try and see for yourself. Because they contain very little sugar, they’d make a great snack for kids as well as adults. A video is coming on soon showing the crispness of these waffles.

Green Bean and Almond Casserole

Mix things up for everyday meals or during the holidays with this lovely green bean and almond casserole. The sweetness of the red peppers and the crunch of the roasted almonds are a lovely addition to what otherwise would be a boring vegetable. Roast them in the oven or use the stovetop version. It’s that time of year again and this year I decided to try Schar Deli-Style Sourdough Bread in my stuffing. I usually use their baguettes. So, it took some figuring out how much liquid to use using this new bread. It will vary depending on its use, which I explain in this recipe. The bread doesn’t taste sour but it is flavorful. It makes a wonderful stuffing.

Gluten Free Apple Pancakes Using Carla’s Almond Flour Blend Recipe

Gluten Free Apple Pancakes

A healthy way to make pancakes is by replacing the high-starch content of gluten free flour blends with some almond flour. However, to make even healthier pancakes, replace much of the batter with apple. Not only are apples naturally sweet, but they contain moisture and fiber. More importantly, this recipe makes delicious gluten free apple pancakes. Dust with cinnamon and cover with pure maple syrup or powdered sugar.
