Microwave Gluten Free Peanut Butter S’mores Bars

Gluten Free Peanut Butter Smores

Imagine a peanut butter cookie crust (crunchy of not) filled with marshmallow chocolate ganache and topped with homemade marshmallow fluff (with even an egg-free fluff). This dessert is so addictive, you better plan on serving a healthy salad with plenty of protein for dinner. After the multiple samples you’ll have before dinner, it will definitely be one of those desserts before dinner days.

Chocolate Ganache Marshmallow Frosting – Filling (Dairy-Free Option)

Chocolate Ganache Marshmallow Frosting - Filling

As thick as the ganache filling in chocolate truffles, this chocolate ganache marshmallow frosting and filling tastes like chocolate caramel but is not chewy. This mixture makes one of the most decadent desserts I have had in quite a while. The only problem is that it is so addictive! Enjoy all you want and have a chicken salad for dinner.

Gluten Free Smoky Paprika Chicken with Cream Sauce (Dairy-Free Tomato-Free Chicken Cacciatore)

Gluten Free Smoky Paprika Chicken & Creamy Sauce

Whether you make this dish dairy-free or not, it is a pleasant change compared to traditional dinner meals. The sauce is creamy with a flavor reminiscent of chicken cacciatore but with a few changes like using smoked paprika and omitting tomatoes. This is so good that I’ve added it to my regular rotation of dinner recipes. Oh, and it’s antioxidant-rich as well.

Gluten Free Chicken and Bacon Quesadillas

Gluten Free Chicken Bacon Quesadillas

When you’re looking for something different to make for dinner, make these delicious gluten free chicken and bacon quesadillas in the oven or on the stovetop. The bacon and added spices make a healthy substitute for chorizo (no red dye, soy, or unwanted pork parts). Use traditional bacon or turkey bacon, as long as the brand is gluten free. Use brown or white meat chicken. Add your favorite quesadilla toppings or eat plain and you’re good to go!

Gluten Free Pizza Crust With Almond Flour Blend

Gluten Free Pizza With Almond Flour

Everyone has been enjoying the flavor and added protein of my new Gluten Free Almond Flour Blend so much, I thought I’d make a pizza using it. I’m so glad that I did because this is the most flavorful pizza crust I’ve ever had. On top of the almond flour, I add seasonings as well. It’s just a perfect balance with a wonderful texture. I prefer homemade pizza mixes over packages containing things like cellulose or modified starches. Enjoy!

Thai Jasmine Rice – Seasoned Jasmine Rice

Seasoned Jasmine Rice

Seasoned Jasmine Rice

Jasmine rice is a favorite of many Thai people though you can cook many side dishes using it. This seasoned jasmine rice is tender, fluffs up nicely, and full of flavor. I’ve added to easy recipes for Honey Ginger Glazed Carrots and a quick chicken recipe as well. Also included are two optional ingredients to make it less like rice pilaf and more like Thai Jasmine Rice. Enjoy!
