Strawberry Sorbet (Naturally Gluten Free)

It’s strawberry season again and I am delighted! Sorbet is gluten free, naturally, but not always egg-free. This strawberry sorbet recipe includes several choices of ingredients. Due to my citrus allergies I used cream of tartar in place of lemon juice, but if I could have use lemon juice, and suggest you do for a more flavorful sorbet. Pineapple juice or orange juice will also work well. As a thickening agent you can either use a food starch or egg white, whichever works best for your diet. If you are watching your sugar intake or prefer a refined sugar-free version you may use agave nectar/syrup in place of simple syrup (sugar and water heated). Adding a natural food coloring will make it look more appetizing, but it is not necessary. Select Tea makes natural ones. If you do use food coloring, you are not limited to red. Gluten Free Plum Barbecue Sauce and Steak Rub Recipes

Steak and Homemade Gluten Free Plum Barbecue Sauce

It’s gilling season, and a good gluten free barbecue sauce (cross-contamination free) may be hard to come by, especially a barbecue sauce without tomatoes (allergies). However, I enjoy my Gluten Free Barbecue Sauce Without Tomatoes. This time, since I had some homemade plum sauce already made, I thought it would make a great gluten free barbecue sauce substitute, along with other ingredients and a good steak rub. It came out wonderful!  I’ll use it on broiled steaks, as well. I don’t know if I will ever make a plain steak again!

Gluten Free Egg Substitutes

For those who are also completely egg-free, you may find this list of egg substitutes very helpful. There are 3 basic purposes of using egg in a recipe: to moisten, to bind ingredients together, or to leaven (rise). Depending on the purpose, will depend upon the egg substitute used. Using an egg substitute is a great way to lower your cholesterol and calorie intake, as well. I especially like the use of flax seed meal as an egg replacer. Though agar-agar works very well, too, it is quite expensive. I am constantly discovering new gluten free egg substitutes. So check back often. I usually add a dated update for new discoveries.

Little by little I am attempting to remove all soy from my diet. The one thing that I am still working on is converting some recipes to soy free. Therefore, for this Asian gluten free salad dressing recipe, often known as Chinese chicken salad, I chose to use balsamic vinegar instead of rice vinegar and soy sauce. Dairy-Free Gluten Free Sandwich Bread Recipe: Oat Bread (or Sorghum)

Gluten-free Oat Flax Bread

I have been experimenting with this gluten free sandwich bread recipe that can be used for sandwiches and I have found that adding additional egg white turns out a much softer bread dough. It was heaven! – much like a homemade white bread texture, but not as starchy because I used mainly oat flour. I tried adding one additional large egg to my original gluten-free oat bread recipe and it turned out much better! Instead of adding 4 large egg whites, as mentioned in the recipe below, I added 2 large and 2 extra large. I have found that the more egg white you add, the larger and softer the bread. You do, however, have to be careful of adding too many, as you do not want the texture of cake. Watch the video of me making this Gluten Free Oat Bread. Gluten Free Cracker Recipe: Whole Grain

This was my first attempt at creating a gluten free cracker recipe. I was really anchoring for a healthy gluten-free snack made from whole grains. They compliment a dip very well. Avocado and hummus are my faves! They have a bit of a nutty flavor due to the teff and millet flours, a great way to get fiber and whole grains. The thinner you roll them, the crispier the cracker. Perhaps you already have a favorite gluten free cracker recipe. And perhaps and this will inspire you to use a little whole grains in it next time. Enjoy!

I went to my favorite Italian restaurant that caters to those on a gluten-free diet and they made up something special for me, along with their delicious roasted red pepper mashed potatoes! Ever since I have been meaning to create my own recipe. These can be made dairy-free by using a butter or margarine substitute, however, I used butter on mine. I thought my husband who likes to eat American style, meat and potatoes, may not enjoy these gluten free roasted red pepper mashed potatoes over regular mashed potatoes, but he did! Custard is my favorite pastry filling, especially the gluten free recipe I use for my creme bruleé and to fill my gluten free cream puffs. However, this time, I needed a lighter custard for my cannoli that I was serving at our Gluten Free in Fresno Support Group meeting at Whole Foods. Unfortunately, real custard is just too heavy for a gluten free cannoli shell or a regular one for that matter. I thought I would lighten the custard up a bit with a bit of sweetened whipping cream, making an incredible delight! Everyone at the meeting really enjoyed the custard filling in the cream puffs a couple of months ago; therefore, I thought the cannolis with this gluten free bavarian cream would be a big hit, as well. Gluten Free Curried Grilled Halibut

Curry powder contains turmeric. In India, turmeric is promoted as an anti-inflammatory herbal remedy and is said to produce fewer side effects than commonly used pain relievers. Some practitioners prescribe turmeric to relieve inflammation caused by lupus, arthritis, muscle sprains, swelling, and pain caused by injuries or surgical incisions. It is also promoted as a treatment for rheumatism and as an antiseptic for cleaning wounds. In addition, turmeric contains the antioxidant curcumin, which has been found to hinder the growth of mutated cells associated with cancer of the breast, skin, and colon, as well as lymphoma.
