I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese. Gluten Free Potato Pancakes for Breakfast

Though this Potato Pancake Recipe was posted previously, I thought I would share it with you as a gluten-free breakfast or brunch idea. There are a number of fillings you can use for potato pancakes. My favorite is cheese, but I usually eat them plain or with a little butter on top. Whether serving a crowd or just a few people, nachos are always a big hit. With this gluten free nachos recipe you can add your favorite toppings, from olives to jalapeno peppers, from sour cream to guacamole. Of course, a good cheese sauce is a must. You can either add cheese and melt in the oven or microwave, or make a homemade cheese sauce. If you wish to kick it up a notch, add chili powder, onion powder, and garlic powder. Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup. Gluten Free Walnut Butter Cups

I wanted to make gluten free peanut butter cups, but I do not eat peanut butter very often and the Trader Joe’s peanut butter my husband uses is made in a factory shared with wheat. So, I opted to create walnut butter cups instead. First, I created a walnut butter recipe sweetened with agave syrup, making a great peanut butter substitute. I share both recipes with you below.
