When I think of mudslides, I think of the chocolate and coffee cocktail that my sister and daughter once shared. It brings back good memories and times of celebration. This cookie dough is one of everyone’s favorite. It doesn’t call for superfine rice flour and it soooo tasty! It is the best cookie dough I have ever made! You can always tell a good cookie by the taste of the raw dough. You’ll love both!
Without the use of any white starch such as potato, tapioca, corn, or arrowroot, you can make these delicious gluten free spritz cookies or gluten free cut-cut butter cookies. The recipe calls for one flour and one gum. The remaining ingredients are standard cookie ingredients. I rolled out some of the dough and cut several different shapes out. Everyone raves about how authentic the texture and flavor is of my Crunchy Gluten Free Graham Cracker Recipe. I wanted a crunchy gluten free peanut butter graham cracker reicpe, but I couldn’t find even a gluten-containing recipe. So, I got to work and I am so glad that I did. They taste incredible and are crunchy too! You can substitute almond butter or tahini (sesame butter) for the peanut butter. Eat them plain, soak in milk, serve with ice cream, broken up in parfaits, or use them to make a pie crust just as you would with traditional graham crackers. My grandmother and mother used to make biscotti (Italian cookies), but I never enjoyed them until I made my own, gluten free, of course! These gluten free pumpkin biscotti may be filled with dried fruit and/or nuts, or not. Did I hear, “Amazing”? Why, yes, I did! Use pumpkin puree or pureed sweet potatoes.
