Jello is gluten free and enables you to make a very festive gluten free fourth of July jello dessert recipe. While I do not usually post any gelatin desserts, these are so adorable, I couldn’t resist. I just loved the red, white, and blue colors. You can create all sorts of fun things with this recipe: use different fruit, add fruit to the jello, tilt the glass while it’s chilling to create angled jello layers, and add vodka. Summer time or winter time, a room temperature salad is perfect. This easy gluten free pasta salad is great at picnics as you can remove it from the ice chest to reach room temperature when you first arrive. Soft Gluten Free Flour Tortilla Recipe (Commercial Yeast-Free Naan Bread)

I already have a few gluten free tortilla recipes: Low-Sodium Gluten Free Tortillas (my first attempt – very similar to Trader Joe’s brand – chewy and a little stiff), Gluten Free Naan Bread (so good, but is thick and calls for instant yeast), and Soft Whole Grain Gluten Free Wraps – Tortillas (when you use Expandex modified tapioca starch these are the best!). Jerk Chicken (Gluten Free)

Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. No-Bake Gluten Free Cheesecake and Crust (Dairy-Free Options)

I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Quick Gluten Free Paella (Without Seafood or Chorizo)

Any paella, including gluten free paella, usually contains chicken along with seafood and chorizo, however, I don’t care for seafood or the gristle in chorizo. I can only find the lower quality chorizo that contains gristle. Therefore, I skipped the seafood and substitute bacon bits for chorizo. To speed things up, I use instant rice in this paella recipe, but you can use regular, short grain rice. Just cook the paella with enough broth to substitute the amount water you would normally use to cook the rice. I didn’t have any saffron, so I skipped it as well. It turned out delicious! I even caught my husband taking a spoonful on his way to place his plate in the sink after our meal was complete. I told him that is one the highest forms of complements he could pay me. Peach Glaze or Peach Compote

In preparation for my new cake recipe that uses this peach glaze to substitute frosting, I thought I would share it with you now so that I can link to it in the recipe. It has all sorts of uses. You can add cinnamon to it and top ice cream, use it plain, or add hot spices such as cayenne, ginger, and chili powder. Baste your pork and chicken entrees using savory or hot spices.
