I’m not one big on quinoa salad, as I usually enjoy my food either cold or hot. And most of the gluten free quinoa salad recipes I’ve tried are not flavorful enough for me. I finally got this recipe right, though. The pineapple really makes this dish flavorful, so much that I didn’t even need a dressing. You can always top it with lemon, though, for even more flavor, or even your favorite salad dressing. In addition, if you replace the corn with other vegetables, you can makes this dish not only gluten free, but corn-free and grain-free. I hope you enjoy this recipe, as it brings a lot of color to the table. Continue reading “Colorful Gluten Free Quinoa Salad”
Gluten Free Macaroni Salad Italian Style
I’ve been asked how to prevent gluten free macaroni salad from hardening so much in the refrigerator. I find it best to make the salad right before you’re going to serve it. And if your dressing is well chilled, it should make the salad cold enough. Though, serving it room temperature is fine. I made this salad a little sweet by using stevia, but you can add sugar instead, if desired. It was just perfect! I had never made a gluten free version, and I thoroughly enjoyed it. I hope you do, too. Continue reading “Gluten Free Macaroni Salad Italian Style”
Gluten Free Honey Mustard Salad Dressing – Sauce
I was in the mood for a new salad dressing, and something that would compliment chicken. Though my chicken was not marinaded, I really was in the mood for honey mustard chicken. So, the next best thing was to create a honey mustard dressing. This dressing can be used as a sauce for many other dishes, besides salad. Use it as a dip for chicken tenders or raw vegetables; or a marinade for chicken. Get creative! It’s sweet and a little tangy. Continue reading “Gluten Free Honey Mustard Salad Dressing – Sauce”

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Gluten Free German Hot Potato Salad
This is my all time favorite potato salad recipe and potato side dish. My sister started making this about 30 years ago. She hasn’t been able to find the recipe, but did recall the ingredients. Instead of using all-purpose flour, as in a traditional German hot potato salad recipe, I used potato starch. I can’t remember the last time I made this and have lost the recipe, as well. What makes this recipe stand apart from other German Hot Potato Salad recipes is that the apple cider vinegar, combined with celery seed and a little bacon grease. Our entire family loves this recipe so much, we must have had it for about 20 straight years with our Christmas ham (with very few exceptions). It’s hard to believe Christmas is just 3 months away! I had to wing it on the quantities, but it tastes just like I remember – oh so good! Of course, I was always known for increasing the bacon and almost doubling the sauce. What are holidays for, right? This time I made it as the old recipe called for, as I just had 4 slices of bacon. That is actually what precipitated me making this dish. I did increase the sauce, however. Enjoy! Continue reading “Gluten Free German Hot Potato Salad”

Gluten Free Nanaimo Bars Without Coconut
With the hot weather we’ve been having, I thought I would make a no-bake dessert. Nanaimo bars are a Canadian treat. I substituted the traditional packaged pudding (or packaged pastry cream, depending upon brand) with gluten-free cream cheese (just 2 tablespoons). You can always use your own homemade custard. Mothers and grandmothers used to make these for their kids beginning in the 50’s and 60’s, and some still do. I made them without coconut, due to food allergies. Shredded coconut is usually used in the bottom layer. I substituted coarsely chopped almond meal. You can use regular. I just ground my own. This is a special treat that everyone can enjoy because you can change ingredients fairly easily to allow for food allergies. Enjoy! Continue reading “Gluten Free Nanaimo Bars Without Coconut”

Gluten-Free Raspberry Vinaigrette Marinade and Sauce
Raspberry vinegar produces a darker, nicer looking meat when grilled. It helps produce those nice, dark grill marks, which every chef desires. Using a raspberry vinegar is a quick and easy trick. Anything with sugar or fructose (all fruit contains fructose) creates a darker crust on meat, whether fried or grilled. I often use balsamic vinegar, but was attracted to this raspberry vinegar while shopping when I was hungry! Gee, my tastes sure have changed. Years earlier I would have purchased junk food, like chips. Continue reading “Gluten-Free Raspberry Vinaigrette Marinade and Sauce”
