Interested in making homemade gluten free bread that doesn’t crumble or stale easily in your boxed lunch? You can probably get away with using my Copycat Schar Gluten Free Bread Recipe for the Oven in your bread machine. However, this bread machine recipe forms a dough ball much easier than the oven version. I used this Breadman machine with a gluten free setting, but you can probably make it successfully on the longest baking bread cycle, even with a double rise, in a standard machine. I believe I have found the secret to making gluten free mug cakes (cakes cooked in the microwave in a mug)! Mug cakes, even when made with gluten can be gummy, or worse, overcooked and dry. However, this recipe turned out perfectly as you can see in the photo. Using two key ingredients and adjusting the cooking method creates a texture just like your favorite baked banana bread. Just by using a little wild rice, you can add a nutty flavor to your dishes. This gluten free cranberry and/or blueberry wild rice may be used as a side dish or to stuff any bird such as chicken, turkey, and my favorite, cornish game hens. I recently served this as a side dish with chicken breasts. We gobbled it all up. You can also tear up pieces of gluten free rotisserie chicken and toss them in. Yum! Gluten Free Artichoke Dip, Sauce, or Soup + Video

During the holidays, this gluten free artichoke dip is extremely popular.  However, it is perfect for any special occasion. The classic recipe usually calls for sour cream or cream cheese. Instead, I used a bechamel sauce (flour and butter) with onion instead. It makes for a very flavorful dip/sauce. I even added some cheese, cooked bacon, and omitted the traditional spinach.
