Gluten Free Cut Out Sugar Cookies

Most of the sugar cookies I have tasted are a bit dry as they all contain egg. Therefore, I added additional butter to the recipe I developed so that you do not have to sacrifice on flavor or texture. Additional butter makes them more delicate, but not as delicate as shortbread. They are somewhere in between shortbread and sugar cookies. I developed a bread pudding recipe for KitchenAid’sĀ 6-Quart Slow Cooker with Easy Serve LidĀ back in 2012. I have played around with the recipe a couple of times since then. I have doubled the custard which I enjoyed much better. My husband is a bread lover and likes it dense with a single custard amount. So, it’s really up to you. Recently, I used the standard amount of custard, but I threw in some Comstock apple pie filling. (You can use homemade, if desired.) About three years ago, my father’s lady friend and her daughter bought the ingredients to make my father matzo ball soup. They were going to use a packaged matzao ball mix. They had to leave early because my father became ill. So, they never got a chance to make it. I decided to give it a go. Instead of making their gluten version, I developed this gluten free matzo ball soup recipe and dropped some off at their hotel before they left. Out of all the gluten free pies I have made, I would have to say this gluten free Dutch apple pie is my favorite. It has a unique crust plus a crumble topping, which both create texture, sweetness, and flavor! It’s the best of both worlds. Apple filling is my favorite of all.
