These gluten free mashed potatoes are to die for! A family member made these a few months ago and I was afraid to eat them, as I had no idea if the bacon was gluten free, but I found out that they included sour cream and cream cheese, as well. All of the guests were raving about them, and I just had to make them, gluten free. She had added some cheddar cheese to the top. I’ve added made these with cheese on top, inside, and without cheese. You just need to make sure all of your ingredients are gluten free, including the bacon, cream cheese and sour cream. You may mix in bacon or your favorite cheese. I like cheddar. I added crumbled bacon to to pof my gluten free mashed potatoes. I bet the left overs make wonderful potato pancakes! Just fry them cold with some butter. Yum! Can’t wait to try it!

These gluten free glazed meatballs were a hit on Saturday at our holiday party. We had 37 guests, and I really wanted to make something everyone would enjoy and was kid-friendly. My husband will only meatballs cooked in spaghetti sauce or meatloaf that contains ketchup. However, he loved these meatballs before I added the glaze. Gluten Free Gingerbread Cookies

In making gluten free gingerbread cookies, the trick is to have a very stiff dough and chill the dough to prevent spreading during baking. This dough is high in starch, making a soft (a bit chewy) cookie. If you like them crispy, I suggest using a higher rice flour to starch ratio and skip the baking powder. I chose to make a softer gluten free gingerbread cookie because my survey on Facebook resulted in more soft than crispy votes, and I cannot resist a soft or chewy cookie. Gluten Free Cornbread – Cranberry Polenta Bread

Polenta is coarser than cornmeal and compliments this gluten free cornbread (actually gluten free polenta bread) recipe well, as it calls for superfine rice flours. It is just like a cornbread, but a coarser grain. I used Golden Pheasant brand, found at my local grocery store. You can definitely use cornmeal, if that is what you like, or is easier to obtain. This recipe was created upon my husband’s request for a coarser, crumbly, gluten free cornbread. It is moist, yet has more texture and crumb. Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

I had put off developing a soft gluten free dinner rolls recipe, for too long. So, I made it a priority, and I am so glad that I did! I am not a big bread eater, but I just cannot stop myself with these rolls! They are not grainy at all. Gluten Free Fruit Cake – Fruitcake

I have had a few requests for a gluten free fruit cake recipe. I created a lighter fruit cake and lessened the typical amount of sugar, glazed fruit and baking temperature, because I am not a fan of fruit cake, at all, even gluten free fruit cake. The adjustments were perfect, as is this gluten free fruit cake recipe, now, at least for me.
