Gluten Free Cream Puff Recipe: Rings with Caramel Whipped Cream – Paris-Brest

Image: Gluten Free Cream Puff Ring

Pate choux in French is a dough made simply with eggs, flour, and sugar. In America, this dough is used for cream puffs. This particular gluten free cream puff recipe is shaped as rings instead of the typical puff and is filled with a caramel whipped cream. The real Fench name for this dessert is Paris Brest. They make a spectacular presentation. I added toasted almond slices to mine and a sprinkle of confectioners’ sugar. You can use regular whipped cream and add strawberry sauce, as I did in my original gluten free cream puff recipe (see below link). Enjoy! Super Crunchy Gluten Free Bread Sticks Recipe (Breadsticks)

Crunchy Gluten Free Bread Sticks

This crunchy gluten free bread sticks recipe is so crunchy, I just had to share it with you. The recipe was inspired by the ingredients in Schar’s Gluten Free Breadsticks. They are much harder and crispier than Schar’s, but in gluten free bread sticks, this is a good thing. Other names for these bread sticks are grissini (thin, crisp Italian breadsticks) or dipping sticks. See my below notes to learn more. Then try them yourself.

Gluten free breaded chicken is no different than regular chicken. I usually use homemade gluten free seasoned bread crumbs, however, this time I wanted something more nutritious. I chose to use Van’s gluten free crackers. They come in several flavors and they’re all whole grain. I used their Lots of Everything flavored crackers. I used chicken breasts for this recipe, however, you can do the same thing with chicken tenders. Meanwhile, they turned out moist and delicious. Enjoy! This recipe brings back fond memories of our traditional Sunday Italian dinner at my grandmother’s house when I was a child. Though Grandma didn’t make gluten free spaghetti and meatballs, this recipe tastes just the same. All you need is good tasting gluten free bread crumbs (there are some bad ones out there) or gluten free oat flour. You can make this recipe to serve a crowd, or freeze most of it for future use. I usually make it ahead of time and freeze it in several different size contains: individual, two servings, four servings and one large one. Then I am prepared for unexpected guests or when I just don’t have the time to cook for my hubby. I’m allergic to tomatoes, but my guests and husband really enjoy this recipe, and I hope you do, as well. Continue reading “Gluten Free Spaghetti and Meatballs”

Lemon panna cotta is an Italian, egg-free custard. Panna cotta can be made in several different flavors with an array of sauces. It is often served with biscotti, an Italian biscuit-cookie. You will find this particular recipe to include your choice of plain bourbon sauce or walnut bourbon sauce. I’ve included the recipe for the garnish, candied lemon peel, as well. I hope you enjoy this recipe. It appears to be a lot of work, but if you use plain lemon peel for garnish, it’s done in a snap. I love recipes that create a beautiful presentation, yet are very little work! Enjoy. Continue reading “Lemon Panna Cotta (Egg-Free Custard) with Bourbon Sauce (Gluten-Free)”
