Gluten Dairy and Egg-Free Devil's Food Cake Recipe

While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Gluten Free Chicken Kebabs – Kabobs with Honey Marinade

Gluten Free Chicken Kabobs

One of my Facebook followers requested a recipe for a sweet and sticky chicken kebab / kabob marinade. Honey or sugar and some liquid can create stickiness, but honey or agave is the best. Gluten-free barbecue sauce would also work if that’s all you have on hand. However, honey or honey and mustard are awesome. It’s great due to my tomato allergies. In this recipe, I use lots of black pepper. Depending to whom I am serving it to, I may even add a little gluten free chipotle or hot sauce. Yum! There is an Italian dessert by the name of cannoli that consists of a deep-fried pastry shells filled with sweetened ricotta cheese. I altered this traditional dessert and created a savory cannoli, perfect for an appetizer. I filled mine with creamy ricotta cheese, peas, and basil. You can either make this soy-free or dairy-free. Gluten Free Pate a Choux (Cream Puff) Appetizers

I think these appetizers are going to be the appetizer of the year! Whether you call these little shells, cream puffs, pate a choux, or profiteroles, they all equal deliciousness. If you don’t have the time, energy, or skill to make my Gluten Free Puff Pastry, pate a choux is the next best thing. It’s easy and almost foolproof to make. Just be sure to beat the dough well after the addition of each egg. You can fills these lovely pastries with a various ingredients, from pizza toppings to liver pate. In Japan, on Christmas Eve, they traditionally serve Christmas cake, made of sponge cake, covered in whipped cream and topped with strawberries. Sometimes it was decorated with chocolate or Santa Clause. It was a symbol of Western modernity and a high social status as they were expensive. Since it’s inception, these cakes have become affordable. They are also available in multiple variations, not just whipped cream and strawberries. I knew nothing about this tradition until Julie asked me for a sponge cake recipe so that one of her sons could make a gluten free Japanese Christmas Cake covered in Cool Whip for school. I’ve never been a fan of gingerbread cookies or houses when I consumed gluten, probably because people like to make them sturdy, which means dry in my book. This recipe is pretty sturdy, but moist inside. I love them. Last year, you couldn’t stop me and my husband from grabbing a piece of the gluten free gingerbread house I made using the same recipe.
