Whether you love Oreos or Thin Mints, you’ll love these gluten free Christmas cookies. I’ve taken my Gluten Free Oreo Cookie Recipe and covered them with a similar creamy white glaze and topped them with finely crushed gluten free candy canes. Deconstructed Gluten Free Oreo Peppermint Cookies
My gluten free Oreos recipe can easily be made into Christmas cookies. If desired, dip them in melted chocolate with added peppermint extract for a Thin Mint-Style cookie!
Ingredients:
- 1 recipe Gluten Free Oreo Cookie Recipe
- 1 recipe Royal Icing
- 8 gluten free candy canes, crushed
- 1 cup chopped gluten free chocolate (not morsels)
- 2 teaspoons confectioners' sugar
- 16 drops mint extract, or to taste (optional)
For Mint Chocolate Coating (Alternative to Royal Icing) (per dozen cookies) :
Instructions:
- Make the Oreo Cookie dough as instructed in the above link. Roll dough and cut out the shape desired and bake a couple minutes longer than stated when making larger cookies. Set on wire racks to cool completely.
- Make the Royal Icing as instructed in the above link, and use to decorated the cookies. Immediately add crushed candy canes to wet royal icing. Set aside to dry. Alternatively, skip the Royal Icing and make a chocolate coating instead: Working in batches, melt chocolate in a heat-proof bowl over simmering hot water. Add peppermint extract and stir. Coat the top of each cookie and add crushed candy canes. Set aside to dry.
- Store in an air-tight container. Whatever will not be consumed within 2 days, freeze up to 4 weeks.
