I have been making an effort to reduce the carbohydrates in my diet. I purchased a Spiral Vegetable Slicer and my first experiment was making zucchini ribbons. Using zucchini pasta instead of high carb rice or corn pasta saves a tremendous amount of carbohydrates. One medium zucchini contains only 6g carbs and 2g fiber. My favorite gluten free brown rice pasta contains 43g carbs and 2g fiber per 1/2 cup of uncooked pasta. If you enjoy zucchini, you will love this dish. Gluten-Free Sugar-Free Dairy-Free Chocolate Recipe

Sugar-free chocolate can be expensive, and if you have to find a safe gluten-free brand on top it, it can be even more difficult. With this gluten-free sugar-free chocolate recipe, you can make dark chocolate or chocolate ganache. If you are also on a dairy-free diet, you can still make both. For dairy-free ganache, instead of using heavy whipping cream, you use coconut milk. For the fat in this recipe, you have the option of using shortening (I use organic palm shortening) or coconut oil. Depending upon its use and your dietary needs will determine which ingredients you use. This recipe is low in carbs when not using cream. I hope you enjoy this recipe. It has many uses. You can even break it up to use as chocolate chips in your baked recipes.

Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe

I am aware that many individuals on a gluten free diet are watching their intake of starch. In addition, some individuals have trouble with gums. This gluten free cake recipe is free of all starch (potato, tapioca, arrowroot, and cornstarch) and gums (xanthan, guar, etc). It is also free of leaveners such as baking soda and baking powder. Obviously, the cake still calls for sugar, which is still high in carbohydrates, but you save a ton of carbs and have added protein from the eggs in this gluten free cake recipe. It is light due to the whipped egg whites that are folded in towards the end. I’m not keen on using rice flour in cakes because it is usually gritty, unless it is a superfine rice flour. Gluten Free Chinese Food at Home: Moo Shu Beef Recipe

I originally went gluten free in 2005. I have long since given up on eating out at Chinese restaurants other than PF Chang’s. They serve sumptuous gluten free Chinese food, but most dishes are extremely high in calories. So, I often make my Chinese food at home instead. Moo shu is usually served with pork; however, I used beef in this recipe. You may serve it over rice or make it low-carb by serving it over sauteed vegetables. You can even use it to stuff a gluten free tortilla or pita pocket. Made with top sirloin, it is exceptionally tender and delicious.

Egg foo young, also spelled egg foo yong, egg fu yung, egg fooyung, and egg furong, literally means “lots of eggs”. With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. Toasted Hemp Seeds Recipe for Bread and Salads

If you like a little crunch and a nutty flavor in your gluten free whole grain bread, this recipe for toasted hemp seeds will be a perfect fit for you. It’s very easy to do and takes very little time. You can toast any seeds, but hemp seeds in particular need to be toasted, as they are hard seeds. Other seeds such as sesame seeds don’t need to be toasted. You can use toasted hemp seeds not only on the tops of your bread, but inside, as well. Now, get to baking some gluten free bread!
