This rosemary chicken is another healthy, gluten free recipe contributed by Joy Bauer from her celiac disease recipe collection. Whether you grill it outdoors or use a grilling pan, this chicken recipe is almost like having breaded chicken. It has a wonderful crunch to it. Yet there are no bread or bread crumbs involved, making it low in carbs. And because you don’t use much oil, it’s low in calories, as well. Gluten Free Dairy Free Almond Avocado Pesto

This is one of those gluten free recipes that truly tastes spectacular. I have stopped using pine nuts in my pesto awhile ago. Almonds provide much more flavor. I have been searching for a way of creating a creamy dairy-free pesto and I finally figured how to achieve it, with avocado! I’m an avocado lover and am always on the lookout on how to use them in new ways. My husband, however, is not a fan of avocados, so I just split the recipe in half and make one with avocado and other half with 1/4 cup Parmesan cheese, as in my Gluten Free Almond Pesto recipe. Because pesto is raw, you can use it on vegetable pasta for a gluten free raw dish, as well. Avocado pesto – I’m hooked, and I bet you will be, too. Gluten Free Potato Gnocchi with a Bacon and Basil Ragu

You may have already tried my father’s neighbor’s Gluten Free Gnocchi Recipe, but this was tastes so much lighter, and less starchy. It’s made with gluten-free flour and riced potatoes. Oh my, my husband and I were in heaven! I laid it on a stripe of store-bought cream basil sauce and topped it off with a bacon and basil ragu. I would have thought were in a 5-star restaurant if I don’t say so myself. And the nice thing about the ragu is that you can use your favorite gluten free cold cut, pastrami, salami, etc. You don’t have to use bacon. It’s so easy! – and bakes in about 30-45 minutes, depending upon the size of the chicken breasts. Gluten Free Lasagna – Chicken Spinach with Creamy Basil Sauce

My experiment for an easy gluten free ravioli turned south. So, I decided to use the filling to layer a gluten free lasagna recipe instead. It really tastes no different than a ravioli, just bigger. This was so delicious! And you’d never know it contained chicken. I’ve included dairy-free, vegan, vegetarian options. If you’re not a spinach fan, use another green such as fresh basil, or even arugula. And of course, the filling may be used for stuffing ravioli, as well. Just refrigerate it until chilled.

This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Gluten Free Mexican Casserole (TexMex)

I was going to make pupusas which contain the same basic ingredients as this gluten free Mexican casserole, but you have to make patties out of the cornmeal and stuff each one individually, seal it up and then fry them. Being lazy, I thought, “Why not just make a one dish casserole?” And I’d prevent the higher fat fried food, as well! This dish can be made with leftover ground beef or bison, chopped chicken or turkey, tender chopped beef, and more. Add cheese to the mixture, or not. I added mine on the time to keep some form to the casserole. It was delicious, but the key is using black refried beans instead of regular. Enjoy! Gluten Free Taquitos or Flautas

I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free  by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas).
