I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas). Gluten Free Potato Dumplings and Chicken
Contemplating my next blog post recipe, I first asked myself, what would my husband enjoy that I have never made. Gluten free dumplings was my answer! Delicious Gluten Free Chinese BBQ Pork (Soy Free and Tomato Free)
This Chinese BBQ pork recipe may be made soy free when using my soy free barbecue sauce recipe which calls for my soy free soy sauce recipe; or with the use of any gluten free soy sauce or barbecue sauce. Traditionally, Chinese BBQ pork does not call for tomatoes or ketchup, though some use it. This recipe is tomato free. And if you’re not on a gluten free diet, of course, you may use any brands you desire. This recipe calls for a slow cooker (crockpot), and may be followed by broiling the meat, which is optional. As you can see in the photo that it is sticky, and you may make it crisp on the outside, if you wish. No matter how you prepare it, in the end, it is flavorful, inside and out. Gluten Free Vol-au-Vent for Sweet or Savory Recipes
A vol-au-vent is a French pastry which is made from layers of puffed pasty, hallowed out and filled with anything from sweet to savory. This gluten free vol-au-vent is stuffed with peach pie filling, however, you may fill it with something savory which contains a little sauce or moisture, such as a seafood mousse, chicken pot pie filling, etc. How this recipe came about was when I stumbled upon a recipe for vol-au-vent, and just had to make a gluten free version. While this recipe turns out a crust similar to pie crust, it can be made with my new flaky gluten free phyllo dough. This gluten free vol-au-vent recipe allows you to be creative. You can shape them into hearts for Valentine’s Day or four leaf clovers for St. Patrick’s Day. You can scallop the edges or whatever you desire. Give it a try. Baked Chicken Thighs Recipe (Gluten-Free)
I really had to dig deep in the memory banks for this baked chicken thighs recipe, and I’m so glad that I did. It was delicious! I haven’t made it in years, and I came to realize there really isn’t much to this recipe at all. I was at my Dad’s last week and though he has limited gluten free ingredients and supplies, I am usually able to whip up most basic recipes. This really is an easy gluten free recipe. If you’d like to make it lower in calorie, substitute some of the butter or buttery spread for a bit of gluten-free chicken broth. Enjoy! Dad did!

Gluten Free Casserole: Beef Pesto Rice
In a rush to make a gluten free dinner? Try this easy gluten free casserole recipe using premade gluten-free basil pesto. Add veggies, if you desire, or serve with a salad. This recipe includes only 4 ingredients and can be made in about 15 minutes. Some rice brands may take longer to cook, however, I found one brand that cooks in under 20 minutes, less. You can speed up the cooking time by using instant rice, which is lower in carbs and only takes about 5 minutes to cook. Gluten Free Casserole: No Egg Chicken Carbonara
I broke all the rules in making carbonara. Thus the title, “Gluten Free Casserole”. I used penne pasta, no egg yolk, mozzarella instead of Parmesan, and more. It is so yummy! You can make this an easy recipe by using pre-cooked gluten-free crumbled bacon. This dish has a gourmet flavor, as I used a bit of white wine. However, you can substitute the wine with additional chicken broth. Add veggies, if you desire. I am looking forward to trying this gluten free casserole with fresh baby spinach.
