Are you tired of the same old way you make chicken? Try stuffing your chicken and bake it with this chicken florentine recipe. It’s so easy! – and bakes in about 30-45 minutes, depending upon the size of the chicken breasts. I love this dish, as I serve it without any starches (rice or potatoes), just a salad, and we still cannot finish an entire breast. Great for low-carb and grain-free dieters! Baked chicken florentine is now at the top of my main dishes for guest now, just because it’s so easy, yet elegant.

An easy main dish, great for a light meal. Use your favorite cheese, the more flavorful, the better.
Ingredients:
- 2 whole chicken breasts, approximately 1.5 lbs.
- 12 baby spinach leaves
- 2-4 slices of cheese (I used Swiss.)
- 1/2 cup roasted red bell peppers strips (See Roasted Red Pepper Mashed Potato Recipe or purchase gluten free ones in a jar or can*)
- Extra virgin olive oil, for coating
- 1 Tablespoon dried or fresh parsley, minced
- Fine sea salt or salt and pepper, to taste
Instructions:
- Preheat oven to 350°F.
- Butter a 1-quart casserole dish, or use oil and set it aside.
- Slice the chicken breast length-wise, just enough to not go through all of the way, allowing you to stuff it.
- Layer the inside with cheese, spinach and then peppers; and tie with kitchen twine in 1 to 2 places to keep closed. Oil the tops of the breasts and pat with parsley (basil is great substitute).
- Place them in the prepared casserole dish; cover; bake for 25 minutes; uncover and bake for approximately 20 minutes more, or until no longer pink inside; salt and pepper tops of chicken; place oven temperature to broil and move to second to top shelf of oven, about 6" away from heat element; bake until golden brown, about 5 minutes (watch closely). You'll notice that the breasts create their own juice, keeping the breast nice and moist. Serve hot with a salad.
