When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. Gluten Free Pork Tenderloin

Whether cooking for a small group or a large crowd, gluten free pork tenderloin is an easy, yet elegant main course. I chose to cook two pork tenderloins, one 2.75 pounds, and the other 2.65 pounds. A half pound per person is sufficient, and will most likely yield some left overs. This gluten free pork tenderloin recipe is no different than any other pork tenderloin recipe, other than gluten free starch was used to thicken the gravy. Gluten Free Meatballs with Basil and Polenta (Creamy or Grilled)

I try to stay away from corn as much as possible, but I was craving some gluten free meatballs. Delish, by the way! Because I cannot have tomato sauce, I needed to make something that was moist with the meatballs. So, I treated myself to some polenta! I usually make the polenta creamy and other times grilled. This is great alone or topped with marina sauce, spaghetti saucecreamy basil sauce, or a wine sauce. Meanwhile, I hope you enjoy these gluten free meatballs and creamy polenta. Mangia! Gluten Free Toad-in-the-Hole Recipe

Being the first time I have made this gluten-free toad-in-the-hole recipe, I did not know what to expect. Toad in the hole is an English recipe which usually contains sausages in a Yorkshire pudding batter. Since the batter turns into a bread-like texture, yet a bit moist, it is usually served with vegetables and onion gravy. I like to keep extra gravy from my beef stew in my freezer. That is what I used for this dish. But knowing I would be short on gravy for my left overs, I whipped up a batch of gluten free, dairy free gravy for the rest. Tri-Tip Roast Recipe with Gluten Free Gravy

I made this tri-tip roast recipe with gluten-free gravy right before I left last week to take care of my father. Now that it’s fall, it’s time for some comfort food, and with Dad terminally ill, I surely needed the comfort. Plus, the tri-tip roast was on sale and I couldn’t pass up the bargain. I like roast because it lasts for more than one meal in our house since it’s just the two of us. And this left my hubby plenty of food in the freezer to tied him over while I was gone. Kid-Friendly Gluten-Free Meatloaf

Gluten Free Kid-Friendly Meatloaf without Salt

Though I am allergic to ketchup, this is my husband’s favorite meatloaf recipe. And though my husband is not on a gluten-free diet, I make him this gluten-free meatloaf. It can be adjusted to meet your dietary needs. Egg replacer may be used instead of the egg; low-sodium ketchup; replace the ketchup with a natural sweetener such as homemade or store-bought plum sauce, etc. This is the only meatloaf my children would eat when they were young. Gluten Free Grilled Halibut with Strawberry Cilantro Salsa

Halibut is wonderful for those with celiac disease, as it is an excellent source of Vitamin B-12 (in which many are deficient), as well as protein and niacin. Gluten Free Gnocchi

This gluten free gnocchi recipe is so easy! While visiting with one of my Dad’s Italian neighbors, I mentioned that I was on a gluten free diet. The woman told me that one of her close friends was also. She makes her some gluten free gnocchi once in awhile. I was going to the grocery store and asked the neighbor if there was anything she needed. She said that she wanted some rice flour to make some gluten free gnocchi. She called me to come over so that I can see how she makes it and shared her recipe with me. She froze some and sent me home with some. It freezes very well. She mentioned that gluten free gnocchi is more delicate than the gluten variety so when I tossed it with some pesto sauce I used a rubber spatula to prevent any breakage, though it really wasn’t a problem. And you can always add a touch of xanthan gum to firm it up. It worked out great, and the gluten free gnoccchi was wonderful! Enjoy! Continue reading “Gluten Free Gnocchi”
