Gluten Free Chocolate Chili

You heard it right, chocolate chili! I also threw in some bacon. I love to keep my guests guessing what the ingredients are in this chili. My daughter made a similar chocolate chili recipe, and she won an award for it. Unfortunately, for me, it contained tomatoes. Being allergic to tomatoes, I created my own chocolate chili recipe, gluten-free of course. You can top this chili with cheese and/or gluten free bacon bits. I over cook some bacon to garnish the top and then add additional juice from the chili on top. It gives it a nice sheen, yet leaves the crunch for added texture. Last night for dinner I just wasn’t up to cooking anything, and wasn’t that hungry, but I managed to make some candied walnuts (I used agave), and threw together this blackberry avocado salad together that I absolutely loved! Falafel, which are popular in the Middle East, is now served all over the world as a replacement for meat, normally have a cake-like texture to them, similar to doughnuts. The texture of this gluten free falafel is something you’ve probably never experienced before, but both my husband and I really enjoyed this. I normally would have cast this recipe aside because it is not the traditional texture inside, but we enjoyed it more than the usual. It has a creamy, almost bean-like texture inside and crispy on the outside. I added a few unusual ingredients, and I am really glad that I did. I hope you enjoy my new version of gluten-free falafel. Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)

I keep hearing from some of my readers that it’s just too hot to bake, even a good gluten-free pizza! In researching how to grill a gluten-free pizza in a cast iron skillet, I came across Man Tested Recipes’ Pizza Dough for Cast Iron Skillet Pizza recipe. Though it is not a gluten-free grilled pizza recipe, it provided me with how much yeast to use, so I could skip the Expandex used in my previous gluten free pizza crust recipe. In addition, my last recipe was a bit too chewy for my taste. So, this time, I added a little more sorghum flour, used less tapioca starch and more potato starch, skipped the agar-agar, and tripled the yeast. It came out great in less than hour! A Healthier Gluten Free Burger with Spinach

A naturally gluten free burger can be tasteless, but this one is full of flavor and is a great way to hide vegetables! When I told my husband I was going to add spinach to our burgers his eyebrows raised appearing very concerned. I smiled, and reassured him he wouldn’t taste it. He enjoys spinach raw, as in spinach salad, but definitely not cooked, though he’d eat it by mixing it with other food on his plate. I served him his burger, along with a salad which contained zucchini, and he enjoyed both, but loved the burger! It’s on the sweet side, and you can omit the chipotle or hot sauce for kids, and possibly the onion, or saute the onion before adding to the raw meat. Gluten Free Vegan Casserole with Artichoke Hearts

When my husband isn’t home for dinner, I often just throw any ingredients in a pan and go for it. I don’t need meat every night. This is my favorite out of all of my gluten free pasta recipes, and it happens to be gluten free vegan. The other night I went in my pantry for dog food when I spotted a jar of artichoke hearts and immediately thought of some with pasta, along with red bell pepper. The rest is history. I used just about every Italian ingredient I could get my hands on in my kitchen to create an authentic gluten free Italian recipe. It’s something that I knew must already exist; however, I had no name for it. That’s all I knew was I would be happy to pay for this in a fine restaurant as a main dish. Raspberry vinegar produces a darker, nicer looking meat when grilled. It helps produce those nice, dark grill marks, which every chef desires. Using a raspberry vinegar is a quick and easy trick. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy!
