Skinny Gluten Free Chocolate Cake

Skinny Gluten Free Chocolate Cake

I created this gluten free chocolate cake recipe with coconut flour when I received a sample of CooKoo for Coconut Organic Flour. My first thought was that one sure way to think healthy and skinny is to increase the fiber in your diet and consume healthier fats. Coconut flour is the perfect way to do both. A matter of fact, when you bake with coconut flour it is so packed with fiber, it acts like a sponge and absorbs much of the liquid. Therefore, you cannot substitute it cup for cup with gluten free all-purpose flour, but you can definitely replace up to 50% with little adjustments, and less with no adjustments at all. Easy Gluten Free Scalloped Potatoes Recipe in Crispy Cups

Gluten Free Scalloped Potatoes in a Crispy Breaded Cup using frozen hashbrowns

I made these last weekend and my husband and I thought we died and went to heaven. We don’t usually react this way unless something contains bacon, but these scalloped hash brown potato cups are truly to-die-for. The creamy potatoes with their seasoned and crisp bread crumb coating is incredible. Using frozen hash browns makes this recipe easy. I don’t think I’ll make my traditional gluten free scalloped potatoes recipe again. I’m looking forward to baking these ahead of time and then baking them again to rewarm for guests. This will make them extra crispy. Enjoy!

Note: I will be working on a dairy-free version soon. Stay tuned in! Continue reading “Easy Gluten Free Scalloped Potatoes Recipe in Crispy Cups”

Gluten Free Cheese and Spinach Gnocchi

Ricotta Spinach Gluten Free Gnocchi

Tuesday is National Cheese Lover’s Day. So, I thought I would share my latest gluten free recipe with you that contains cheese. It doesn’t contain everyday cheese, but either cottage cheese or ricotta cheese (which looks a lot like cottage cheese, but has smaller curds). It’s delicious!

I used 4% fat cottage cheese and chopped the curds up a little smaller. However, it appears pureeing it in a food processor would make it easier to roll. I also used Parmesan cheese in this recipe. I adapted the same recipe that I found in this month’s Sunset magazine. However, I use much less Parmesan and of course, gluten free ingredients instead of glutenous all-purpose flour. Meanwhile, you’ll have fun learning how to roll the gnocchi, which is the best way to make them. It leaves a nice sized space in which the sauce is trapped. When they are rolled, they are also less chewy. Check out the video on how to roll gnocchi. Continue reading “Gluten Free Cheese and Spinach Gnocchi”

Gourmet Stovetop Gluten Free Scalloped Potatoes

Decadent Creamy Stovetop Potatoes

Have I died and gone to heaven? Yes. I have, and so can you. This indulgent side dish is definitely something to splurge on during the holidays. Don’t worry. We’ll diet come January. The rich, creamy, wine sauce makes this dish, alone. Then add bacon and your taste buds are dancing on the roof of your mouth and tongue. All made without cheese. Enjoy these gourmet, stovetop, gluten free scalloped potatoes any time of year. Add poultry or meat, if desired. Continue reading “Gourmet Stovetop Gluten Free Scalloped Potatoes”

Gluten Free Chocolate Pasta Recipe (Sweet or Savory)

Gluten Free Chocolate Pasta

If you’ve visited Italy recently, you may have seen chocolate pasta. It is one of the latest gourmet delights. While they were only sold in their gluten versions for quite some time, I saw some selling online that were gluten free at one point. However, you can easily and inexpensively make your own. You do not even need a pasta machine to do so. Continue reading “Gluten Free Chocolate Pasta Recipe (Sweet or Savory)”
